Peanut Chikki

Peanut chikki, we all grew up enjoying this as kids. This is a very simple easy recipe that can be done in very less time. Healthy and loaded with nutrients, a definate must try during your kids holiday time. Chikki/ gajak or brittle is a perfect treat for adults and kids.


Peanut Chikki
Ingredients
  • 2 cups peanut / groundnut
  • 1½ cup jaggery / gud / bella
  • 2 tbsp water
  • 1/2 mix dry fruits
Method- In a kadai, dry roast the peanut on low flame. Keep stirring till it roasts well uniformly. Once cool, remove the skin and break it into two. Meanwhile in a kadai add the jaggery and add little water and let it melt on low flame. Keep stirring till the entire jaggery melts. Once the syrup is formed, add the peanuts,dry fruits and give it a quick stir till the peanuts are coated well with the syrup. 

In a plate ,add butter paper and pour this mixture over it and pat it to smoothen up. Cut into pieces while it is warm.

Serve once the chikki is completely cooled down. Store the remaining in airtight container.

Palak Stir Fry

Palak Stir Fry is a healthy combination of green palak /spinach leaves with lentils ( tur dal cooked) with mild spices. Easy to make. Enjoy hot with chapati or rasam rice. Spinach or Palak provides healthy nutrients and is rich in iron, vitamins and minerals. It is very important for overall health including skin, hair etc. It is one of the immunity booster foods.

Ingredients
  • 1 bunch Palak/ spinach
  •  (cleaned and chopped finely)
  • 1- 2 dry red chillies
  • 3-4 tbsp grated coconut
  • 1-2 tbsp Cooked Dal
  • salt according to taste
  • 1/2 tsp lemon juice
  • Coriander leaves-few


Seasoning
  • 1/2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 tsp jeera
  • Few curry leaves
  • Pinch-Hing
  • Pinch-Turmeric Pwd


Method: In a pan, heat oil and add the chopped spinach and fry well. Take is aside. Next h
eat the oil in a broad pan. Prepare Seasoning  add mustard seeds, add urad dal, chana dal,Turmeric,hing curry leaves. Add red chillies, saute well. Once done add the chopped Spinach and sauté well. Add salt and mix. Finally garnish it with grated coconut and coriander leaves. Serve hot with rasam rice or chapati. Simple and tasty Palak Stir Fry.

Congress Kadlekai / Masala Kadlekayi

Congress kadlekai / Masala Kadlekayi is a very famous snack from Karnataka and sold mostly in bakeries. It is a easy  snack made from roasted peanuts tossed and seasoned in spice mixture. You can enjoy this with tea or coffee or use it as topping when you make Bhelpuri at home. Simple and easy to make.

Ingredients

Congress Kadlekai / Masala Kadlekayi

  • Raw groundnuts/peanuts – 1 cup
  • Oil – 2 tsps
  • Curry leaves -few
  • Red chilly powder -1/2 tsp 
  • Coriander powder-1/4 tsp
  • Pepper powder -1/4 tsp
  • Turmeric powder -1/4 tsp
  • Hing- one pinch
  • Salt-for taste
Method: In a kadai, add the raw peanuts and  fry them in a low flame until light brown. Keep turning it with a spoon. Once cool, remove the skin of the peanuts by rubbing it with your hands. Try to remove as much as you can. Break it into two pieces.

Next, heat oil in kadai, add curry leaves and fry well. Next add the masala powders and hing. Stir well. Add the roasted peanuts in the kadai. Start tossing the peanuts in the masala such that each peanut is well coated with the spice mix. Do not burn the peanuts. Add salt and mix well.

Voila! your masala peanuts are ready to be enjoyed. Once cool store in airtight container and have fun munching.

Palak Poori / Spinach Poori

Palak Poori is an easy recipe to include healthy greens in your diet. Palak or spinach is a green leafy vegetable that is loaded with iron and vitamins and proteins. Perfect for adults and kids alike. Serve hot with ketchup, chatni or sabzi of your choice. Ideal lunch box recipe! Spinach is an important immunity booster vegetable.


Palak Poori / Spinach Poori 
Ingredients:

  • 1 cup Palak [Boiled]
  • 1/4 cup chickpea flour[Besan]
  • 1 cup Wheat flour
  • 1 teaspoon ajwain
  • 1 tablespoon garam masala
  • 1/2 teaspoon dry mango powder
  • salt to taste
  •  oil
  • Water

Method: Clean the palak well. Chop only the leaves finely. Next in a pan add water and a bit of salt. Add the washed palak leaves and let it boil for 10-15 mins. Once done, let it cool, discard the water and blend it in the mixer. In a bowl,add wheat flour, besan, masala powder, salt and the blanched palak leaves and mix well to make a soft dough. Add water if req. Make puris and deep fry them in hot oil. The puris will be in green color! Serve hot with sabzi of your choice.

Pudina Thokku


Pudina Thokku is a simple tangy spicy side dish for your chapati or bread. Easy to prepare and can be stored for a week.

Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.


Pudina Thokku 
Ingredients
  • Fresh Pudina/Mint Leaves- 1cup 
  • (washed and cleaned)
  • Red chili-10-12 (bydagi/guntur)
  • Tamarind paste-2 tbsp
  • Jaggery-2 tsp
  • Salt-for taste
  • Oil- 2tbps
  • Menthya seeds-few
  • Coriander seeds-few
  • Mustard-1 tsp
  • Hing-pinch


Method- Dry roast the above mentioned items-chana dal,coriander seeds,menthya,red chillies in little oil. Fry the leaves separately. Once cool add the items with jaggery and salt and grind it in paste with very little water.
Once done, add seasoning -heat oil, add hing and mustard once done add to the thokku. 
Enjoy Pudina Thokku with chapati or bread.

Tomato Thokku

Tomato Thokku is tangy spicy made from ripe tomatoes. You can store it for a week. Enjoy it with breads, chapatis or parathas. 

Ingredients
  • 3 tbsp oil
  • 4-5 ripe tomatoes, finely chopped
  • 1 tsp tamarind paste
  • ½ tsp turmeric / haldi
  • 1 tsp methi seeds / fenugreek seeds
  • 1 tsp mustard seeds / rai
  • ½ tsp jaggery / gud
  • 2 tsp Red chili pwd or sarin pudi
Seasoning
  • 2 tsp oil
  • 1 tsp mustard seeds 
  • 2 dried red chilis
  • few curry leaves
  • ½ tsp hing / asafoetida
Method- In a kadai, heat oil and add the mustard and menthya or fenugreek seeds and roast well. Do not burn. Grind it into powder. Next in the kadai, heat oil add chopped tomatoes,fry for 2-3 mins.Next add the tamarind, turmeric and keep stirring. Add water and let it cook on low flame till the tomatoes become very soft and water evaporates. Mash it well,add the roasted powder, jaggery,chili powder and salt and mix well. Prepare seasoning ,heat oil add the mustard seeds, hing,curry leaves, once it is done add it to the thokku.You can now enjoy it with dosa, chapati , idli or bread. Store it in airtight container.
