Rajma on Toast

Rajma on Toast (Rajma aka red kidney beans ) is easy and healthy recipe for your kids. Nutritious Rajma on buttered toast is very tasty and delicious. Worth a try ! 

Rajma on toast

  

Ingredients

  • 1 cup Rajma (kidney beans)
  • (soaked and boiled)
  • 1 cup chopped tomato
  • 2-3 tsp oil
  • 1/2 cup grated onions
  • Cumin /Jeera  - 1 tsp
  • 1-2 green chillies
  • 1 tbsp ginger garlic paste
  • 1 tsp Garam Masala
  • 1/2 tsp Dhania Jeera Pwd
  • 1/2 tsp red chili pwd
  • Kasuri Methi-1tsp
  • salt to taste



Method- Heat the oil in a kadai, add the onions and sauté for 2 to 3 mins. Next add ginger garlic paste, chilies and fry well. Add the chopped tomatoes, cook till it becomes soft. Add the masala pwds and mix. Next add the cooked rajma. Add salt, cook on low heat and the mix thickens. Keep stirring, cook on simmer for 5-10 min. Toast the bread on toaster. 

Apply butter, place this mix on the bread slice, add onions and ketchup. 
Serve Rajma on Toast immediately.

Sabsige Sappu Ambode / Dill Leaves Fritters

Sabsige Sappu Ambode / Dill Leaves Fritters  ( ಸಬ್ಬಸಿಗೆ ಅಮ್ಬೋದೆ )  is yet another fritter variety made from Dill leaves in South India. Easy to prepare. A lentil base with few greens making it healthy and tasty. 

Dill leaves, low in calories, has  anti-oxidant,  disease preventing, and health promoting properties.


Ingredients
  • 1 cup Channa Dal
  • Hing-pinch
  • 9-10 Green Chillies 
  • Salt to taste
  • 1/2 cup coconut
  • Coriander leaves
  • Onions(Optional)
  • few Dill leaves(sabsige soppu) finely chopped
  • Oil for deep frying
  • Jeera-1tsp


Method:


Soak Channa Dal for half an hour.  
Next grind soaked channa dal with jeera, salt, green chillies,
 hing very coarsely with very little water. 
Next add grated coconut, chopped coriander leaves,
chopped dill leaves, onions  and salt to the mixture and mix well. 
Make small balls and flatten it. Set it on a plate. 
In a kadai,heat oil, slowly slide in the ambodes, deep fry till golden brown on both sides. 
Drain on absorbent paper. 

Serve Sabsige Sappu Ambode hot with chutney or sauce 
or enjoy just like that with hot cup of tea or coffee.

Karibevu Chitranna / Curry Leaves Rice Ver 2

  1. Karibevu Chitranna or Curry Leaves Rice is a healthy and flavorful one pot meal made with Curry leaves blended with spices. Curry leaves is abundant with iron, carbohydrates, energy and vitamins. 
    Nutritious, healthy and delicious, you must try this rice !!

    Ingredients
    Cooked rice: 1 cup

    Grinding
    Jeera: 1-2 tsp
    Pepper:1/2 tsp
    Urad Dal-1 tsp
    Curry leaves-handful
    Seasoning-
    peanuts: few
    Cashews-few
    Hing-Pinch
    oil for frying 3-4 tsp
    Mustard -1/2 tsp
    Urad dal-1/2 tsp
    Chana dal-1/2 tsp
    Grated coconut: 2-3 tbsp 
    Salt:for taste

    Method-  Pressure cook rice and spread it on plate to cool. In a kadai, roast curry leaves ,jeera, fry urad dhal, black pepper,  in little oil. Next grind curry leaves,  jeera, pepper into a powder. Take a kadai, heat oil and add peanuts /cashews and fry well. Keep it aside . Add mustard,chana dal urad dal, hing, and sauté. Add the curry leaves mixture and fry for1-2 mins. Next add the rice, salt ,fried peanuts coconut and mix well and serve Karibevu Chitranna hot.

    (you can add 1-2 green chilies while grinding )

White Pumpkin Raita / Ash Gourd Raita 
White Pumpkin Raita / Ash Gourd Raita  is made from yogurt/curds or dahi. It is normally served as dip/side dish. It provides cooling effect and has a nice taste. 

This raita is with a touch of ground mix of raw mustard (hasi sasive ) coconut and chilies. (Kannada name: ಬೂದಿ ಕುಂಬಳಕಾಯಿ

Yogurt is one of the immunity booster food that contains vitamins and minerals and more.



Ingredients 



  • Grated white pumpkin - 1 cup
  • Thick curd - 1 cup
  • Green chilli - 2-3
  • Grated coconut - 1/3 cup
  • Fresh coriander leaves - handful
  • Mustard-1/2 tsp

Seasoning

  • Mustard - 3/4 tsp
  • Hing/asafoetida - pinch
  • Curry leaves - few
  • Oil



Method 

Deseed and peel the skin of pumpkin. Grate and keep it aside. Add salt and mix for leave for 10 mins. Meanwhile grind chilli, mustard, coconut and coriander leaves to a fine paste. Prepare seasoning adding the items mentioned above. Remove the excess water from pumpkin. Add the curds, add ground paste and
mix. 
Add the seasoning and stir well. 
Serve Budukumbalkai raita with parathas or rice.

Cucumber Dosa

Cucumber Dosa is an easy, quick dosa variety.  Simple variant from the simple cucumber , thin and crispy and yummy !

Ingredients
  • Rice - 1 cup
  • Poha/avalakki - handful
  • Grated Cucumber-1 cup
  • Coriander leaves-few
  • Green chillies, finely chopped - 5-6
  • coconut, grated - 2 table spoon
  • jeera - 1 tsp
  • salt - as per taste
  • Water 

Method:  Soak rice, poha and methi seeds for few hours. Next grind them in a mixer. Once done , add cucumber ,chilies, jeera, coriander leaves, coconut and grind again so the batter blends well. Keep it for some time. Make dosas. Serve hot with chutney or pickle of your choice.

Dal Chapati

Dal Chapati , yes it is an interesting and  wholesome recipe. Made from cooked dal mixed with wheat flour and bingo you have a mildly spiced chapati loaded with nutrients of legumes.




A perfect food for you and your little ones.Enjoy !

Ingredients :

  • 2 cups  wheat atta 
  • 2 cups  toor dal (cooked and mashed well)
  • 1/4 tsp  turmeric powder 
  • 1/2 tsp Dhania Jeera powder 
  • 1/2 tsp chilli powder 
  • Ghee or oil


Method- Pressure cook the dal with turmeric .Once cool , mash it well.In a bowl , add the flour,masala pwd,salt and mix it .Next add the cooked and mashed dal into this flour and knead it well to make a soft dough. Add little oil and knead it well.Keep it aside for 30 mins.Make chapatis.Heat a skillet (tava) , gently put in the chapati add oil ,turn on both sides till done.
Serve hot with any sabzi or gravy.

Bittergourd fritters

Bittergourd fritters is an interesting recipe, perfect for rainy season. Slightly bitter and spiced,blended in Gram flour , it has a unique taste. Try it out. Bittergourd is known as Hagalkaayi in Kannada or Karela in Hindi.

Ingredients

  • Bittergourd / Hagalkaayi / Karela               - 3 nos
  • (washed and cut into thin round rings)
  • Besan/Gram flour                                      - ½ cup
  • Rice flour                                              - 3 tsp
  • Red chilly pwd                                      - 1 tsp
  • Chat masala pwd                                   - ¼ tsp
  • Oil to deep fry
  • Salt to taste  

Method- In a bowl , add the sliced Bittergourd rings and sprinkle salt on them. Leave it for some time. This will release water and bitterness.Meanwhile in a bowl, take gram flour, rice flour, red chilly pwd, chat masala, salt and mix. Slowly add water and mix.Heat little oil and add this to the besan mix.Add the  bitter gourd rings to the flour mix.In a deep pan, heat oil for frying. Carefully drop the coated rings in the oil. Fry these well on both sides.

Once done,drain the oil and place it on paper napkin.
