Amla Pickle


Amla Pickle is simple and easy accompaniment for Chapati or parathas. Try this version too. Gooseberry is healthy and loaded with nutrients. We can make variety of recipes using Amla. You can add fresh shredded Amla to Gravies and Sabzies too!

  • Ingredients:
  • 10-12 big Amla / Gooseberry  
  • (cleaned,deseeded and chopped into fine pieces)
  • 2 tsp grated jaggery or sugar
    Amla Pickle
  • 8-10 red chillis
  • Salt for taste
  • oil
  • 1 tsp methi/fenugreek seeds
  • 1 tsp mustard seeds
  • Seasoning
  • 1 tsp mustard seeds
  • 10 fresh curry leaves
  • 2-3 tsps oil
  • Hing-pinch
  • Fresh kalamiri
Method In a pan, add oil, fry the finely chopped Amla for 5-7 mins. Cover and let it become soft. 
Meanwhile fry methi, red chillies, mustard seeds for 2-3 mins. Grind it into fine powder. 
Add this mixture in the cooked amla pan. Add salt, jaggery and mix well.
Prepare seasoning, add this to the amla pickle and mix well. 
Store the Amla pickle in an airtight container in the refrigerator.

Amla Murubba

‘Amla or Nellikayi as we all know is said to be a super fruit loaded with nutrients. It is immensely beneficial for our health, hair, and skin. It helps to build immunity and delays aging. You can make various recipes using Amla.

Here is Amla Murubba. A perfect dish for your kids to enjoy with chapati. Enjoy this khatta Meeta yummy and deliciously sweet Amla recipe.

Ingredients


  • Amla grated-1 big cup
  • Sugar-1/2 cup
  • Water
  • Cardamom Pwd/Elachi- 1 tsp
  • Saffron- few strands


Method- Wash the amlas and grated it finely, discarding the seeds. Meanwhile dissolve sugar in water and make syrup. Keep it on low flame, stir in between. Add the grated amlas in this solution. Let it cook till the mix becomes thick.Add cardamom powder and saffron. 
Once cool, store it in glass jar.
Enjoy Amla Murubba with parathas rotis or bread.

Ginger Pickle

  • 1 cup ginger (cleaned and shredded,sans skin)
  • 1-2 tbsp thick tamarind paste
  • 2 tsp grated jaggery or sugar
  • 8-10 red chillis
  • Salt for taste
  • oil
  • 1 tsp methi/fenugreek seeds
  • Seasoning
  • 1 tsp mustard seeds
  • 10 fresh curry leaves
  • 2-3 tsps oil
  • Hing-pinch
Method - In a pan,add oil ,fry the shredded ginger for 5-7 mins. Let it cool. Meanwhile fry methi,red chillies for 2-3 mins.Grind it into fine powder. Next grind ginger,tamraind paste,jaggery sans water.
Add the spice powder and grind it.
Prepare seasoning, add this to the ginger pickle and mix well. 
Store the pickle in an airtight container in the refrigerator.
