Hagalakayi Gojju

Karela Or Hagalakayi Gojju / Bitter gourd Gojju (Kannada-word for Tamarind based curry) is delicious, spicy gravy of Karela  cooked with tangy tamarind. Enjoy with chapati or rice. A bit of sweet, tang and spice makes this bitter gourd super tasty !

Bittergourd is known as Hagalkaayi in Kannada or Karela in Hindi.


Ingredients
  1. Bitter Gourd-3-4  (finely chopped) 
    Hagalakayi Gojju 

  2. Oil-2 tspn
  3. Mustard – 1/2 tspn
  4. Jeera-1/2 tspn
  5. Chana dal-1 tsp
  6. Urad Dal-1 tsp
  7. Hing-pinch
  8. Turmeric pwd-1/2 tsp
  9. Tamrind juice-1-2 tbsp
  10. Curry leaves few
  11. Rasam pwd-1-2 tbsp
  12. Jaggery - 3-4  tsp
  13. Dry coconut-1-2 tsp
  14. Salt to taste

Method-
In a kadai, add oil and add mustard, chana dal,urad dal, hing, turmeric pwd, curry leaves once done add Bitter Gourd and fry well. Next add Rasam (Saaru) powder, tamarind juice, jaggery, salt, water and mix well. Cook for 10-15 minutes till the gravy thickens. Add dry coconut and mix
Serve  Hagalakayi Gojju  hot with chapati or rice.

Cucumber Gojju

Cucumber Gojju / Southekayi Gojju (Kannada-word for Tamarind based curry) is delicious, spicy gravy of Southekayi or Kakdi  cooked with tangy tamarind. Enjoy with chapati. 

It's traditional dish in South Indian homes.

Ingredients
Southekayi Gojju, gojju

          Cucumber Gojju

  1. Cucumber-1 cup (finely chopped) 
  2. Oil-2 tspn
  3. Mustard – 1/2 tspn
  4. Jeera-1/2 tspn
  5. Chana dal-1 tsp
  6. Urad Dal-1 tsp
  7. Hing-pinch
  8. Turmeric pwd-1/2 tsp
  9. Tamrind juice-1-2 tsp
  10. Curry leaves few
  11. Rasam pwd-1-2 tbsp
  12. Jaggery-1 tsp
  13. Dry coconut-1-2 tsp
  14. Salt to taste
Method-

Pineapple Gojju

Pineapple Gojju  is a yummy, tangy and tasty side dish / gravy for hot chapatis or rice. Pineapple gojju is an all time traditional favorite dish of Karnataka, a must during festivals ! Enjoy! 

(gojju is a kannada word for a sweet n spicy tangy gravy)

              Pineapple Gojju 


Ingredients

  1. 1 cup Pineapples (chopped)
  2. 1/2 tsp mustard
  3. 1/2 tsp jeera
  4. 1/2 tsp chana dal
  5. 1/2 tsp urad dal
  6. Hing-pinch
  7. Turmeric-pinch
  8. Curry leaves-few
  9. 1 tbsp Rasam pwd 
  10. 1-2 tbsp gojju pwd
  11. 2-3 tsp jaggery
  12. 2 tbsp tamarind juice
  13. 1-2 tsp Dry coconut grated
  14. Salt to taste


Method- Cook chopped pineapple in water for 10 mins. Next in a kadai, heat oil in a pan and add mustard,chana dal, urad dal, hing, turmeric pwd, curry leaves once done add  pineapple and fry. Next add Rasam (Saaru) powder and Gojju pwd, tamarind paste, jaggery, salt, water and mix well.  Cook for 5-10 minutes, keep stirring in between till the gravy thickens. Add dry coconut and mix
Serve Pineapple Gojju hot with chapati / akki rotti.

Menthya Hittu Gojju

Menthya Hittu Gojju is an easy side dish for rice, if you are bored with normal sambhar or Rasam. Try this tangy and spicy gojju.



Ingredients:

  • 1-1/2 tbsp. Menthya Hittu pwd
  • 2 tsp. tamarind juice
  • 1/2 tbsp gur / jaggery
  • Salt to taste
  • Water

  • For Seasoning:
    • 1 tbsp. oil
    • 1/2 tsp. mustard seeds
    • Hing-pinch
    • Curry leaves-few
    • Red chili-1

Method: In a bowl, combine all the items 
mentioned in ingredients with 1 cup of water 
and mix well.
Heat the oil in a pan, prepare seasonings , 

once done add to  the gojju mix and mix well.
Serve Menthya Hittu Gojju with chapati/rice.

Bendekayi Gojju

Bendekayi Gojju (Gojju -Kannada-word for Tamarind based curry) is delicious ,spicy gravy of stir fried Bhindi  (Ladies finger or okra ) with tangy tamarind. Enjoy with chapati. Gojju is a traditional dish in South Indian homes. Bendekai Kayirasa is healthy and tasty, an easy substitute for the normal palyas or sabjis.

Ingredients
Bendekayi Gojju,Bhendi curry,okra fry
Bendekayi Gojju
  1. Bendekai-1 cup (finely chopped)
  2. Oil-2 tspn
  3. Mustard – 1/2 tspn
  4. Jeera-1/2 tspn
  5. Chana dal-1 tsp
  6. Urad Dal-1 tsp
  7. Hing-pinch
  8. Turmeric pwd-1/2 tsp
  9. Tamrind juice-1-2 tbsp
  10. Curry leaves few
  11. Rasam pwd-1-2 tbsp
  12. Gojju pwd-1tbsp
  13. Jaggery-1 tsp
  14. Dry coconut-1-2 tsp
  15. Salt to taste
Method-In a kadai, add oil and fry bhindi well. Keep it aside. Next heat oil in a pan and add mustard,chana dal,urad dal ,hing,turmeric pwd,curry leaves once done add Rasam (Saaru) powder,gojju pwd ,tamarind juice,jaggery,salt,water and mix well . Add fried bhindi and mix well. Cook for 2 – 3 minutes till the gravy thickens. Add dry coconut and mix
Serve Bendekayi Gojju  hot with chapati or rice.

Green Grapes Gojju

Green Grapes Gojju (gojju -Tangy gravy) is a yummy, tangy and tasty side dish / gravy for hot chapatis or rice.In case your grapes are sour you can try this recipe.

Ingredients

  1. 1 cup green grapes
  2. 1/2 tsp mustard
  3. 1/2 tsp jeera
  4. 1/2 tsp chana dal
  5. 1/2 tsp urad dal
  6. Hing-pinch
  7. Turmeric-pinch
  8. Curry leaves-few
  9. 1-2 tbsp Rasam pwd (or Gojju pwd)
  10. 1-2 tsp jaggery
  11. 1-2 tsp Dry coconut
  12. Salt to taste

Method- In a kadai, heat oil in a pan and add mustard,chana dal, urad dal, hing, turmeric pwd, curry leaves once done add grapes and let it cook for 2-3 mins. Next add Rasam (Saaru) powder or Gojju pwd ,jaggery, salt, water and mix well. Cook for 2 – 3 minutes till the gravy thickens. Add dry coconut and mix
Serve Green Grapes Gojju hot with chapati/ rotis or parathas.

Gojju Avalakki / Tamarind Poha

Gojju Avalakki / Huli Avalakki or Tamarind Poha  is spicy and tangy easy breakfast recipe. (Gojju is tamarind extract blended with spices) A favorite in Madhwa families. Another Avalakki that can be prepared during Krishna Janmashtmi recipe.


Ingredients:
Gojju Avalakki / Tamarind Poha

  • 1 cup poha ((flaked rice /avalakki)
  • 1/2 tsp. turmeric powder 
  • 2 tbsp. dry shredded coconut
  • 2-3 tbsp. tamarind juice
  • 1-2 tsp grated jaggery
  • 2 tsp Rasam Pwd
  • Salt for taste

 Seasoning:

  • 2-3 tbsp. oil
  • 1/2 tsp mustard 
  • 1 tsp. chana dal
  • 1 tsp. urad dal
  • 2 -3 tbsp. groundnut
  • 1-2 dry red chillies
  • Hing-pinch
  • Curry leaves

Roast and Grind

  • 1 tbsp. cumin seeds
  • 1 tsp. fenugreek seeds
  • 2 tsp. sesame seeds

Garnishing:

  • Dry Coconut

Method: Grind poha in mixer. Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely. Keep aside. In a  pan, add tamarind juice, jaggery, rasam powder, salt, turmeric and little water. Boil for 5-10 minutes. Next add roasted powder, mix well. Add poha, dry coconut and mix well. Remove from the heat and keep aside.
Heat oil in a pan, fry groundnuts and keep aside, next add the items under seasonings with hing and curry leaves, once done add it to poha mixture and mix well. Enjoy hot with chips.

Tomato Potato Gojju (Gojju-Kannada word for tamarind based curry) is delicious , spicy gravy cooked with tangy tamarind. Enjoy with Indian breads. Its an easy traditional dish made in South Indian homes.

Tomato Potato Gojju
Ingredients
  1. Tomatoes -4 chopped
  2. Potatoes-2 (boiled and cut into pieces)
  3. Oil
  4. Mustard – 1tspn
  5. Chana dal-1 tsp
  6. Urad Dal-1 tsp
  7. Hing-pinch
  8. Turmeric pwd-1/2 tsp
  9. Tamrind juice-1-2 tsp
  10. Curry leaves few
  11. Rasam pwd-1-2 tbsp
  12. Jaggery-1 tsp
  13. Salt to taste
Method-Heat oil in a pan and add mustard,chana dal,urad dal,hing,turmeric pwd,curry leaves once done add onions and fry well next add chopped tomatoes, chopped potatoes.
Fry till tomatoes are completely cooked,add little water if req.
Add Rasam (Saaru) powder, tamarind juice, jaggery, salt and mix well and cook for 2 – 3 minutes.
Garnish with coriander leaves.
Serve Tomato Potato Gojju hot as side dish for chapati or puri.
(you can also add onions)

Puliyogare

Puliyogare (Tamarind Rice ) is a very famous South Indian rice delicacy - spicy and tangy flavored.Enjoy!


Ingredients:
1 cup rice (cooked)
2-4 tsp puliyogare gojju/MTR Mix
Salt to taste
3 tbsp. oil
1/2 tsp. mustard seeds
1 tbsp. peanuts
1/2 tsp. Chana dal
1/2tsp. Urad Dal
1/2 tsp. hing
6 curry leaves

Gojju
2 cups thick tamarind juice
3/4 cup jaggery,grated
2 tbsp Sarinpudi/Rasam Pwd
1 tsp. Hing
Few curry leaves
Salt to taste



Additional spice-roasted (if req)
1 tbsp. cumin seeds pwd
1tsp. fenugreek seeds pwd
1 1/2 tbsp. sesame seeds pwd

Method-Cook the rice and spread it on plate to cool.Meanwhile mix tamarind juice, jaggery in a sauce pan and bring it to boil keep stirring constantly.Now add the rasam powder,hing, curry leaves, salt and mix well till it becomes a thick paste.You can add seasoning to this as well and store it for later.
Heat oil in a saucepan, add peanuts and roast well ,keep it aside on a plate, next add mustard seeds,add chana dal,urad dal ,hing and curry leaves,and fry well once done ,add the gojju ,add rice, roasted powder, salt and mix well.Add dry grated coconut and serve hot.

You can also use ready made MTR mix i/o of Gojju.
