Kadai Paneer

Kadai Paneer or Paneer Masala is a simpe and deslicious gravy for Indian Breads. Its spicy and tasty perfect for winter weathers. Try it out. This gravy  is a blend of sautéd Paneer cubes with capsicum in spicy and flavoured onion tomato gravy 

Kadai Paneer
Ingredients


  • 1 Onion (chopped)
  • 2  Tomatoes (pureed)
  • 1 GreenCapsicum / Shimla Mirch
  • (cut in squares)
  • 1 cup Paneer, cut in cubes
  • 1/2 tsp ginger garlic paste
  • 1 Tsp Red Chilli Powder
  • Pinch Haldi
  • 1 Tsp Garam Masala
  • Salt as per taste
  • 1/2 tsp sugar
  • 1 tsp crushed kasuri methi
  • 1 tbsp oil
  • fresh cream
  • coriander leaves for garnish
For Masala (to grind)
  • 2 Teaspoons Coriander Seeds
    Kadai Paneer
  • 3-4 Dried Red Chillies
  • 2 Tsp Cumin Seeds (Jeera)
  • 1 Tsp Fennel Seeds (Saunf)
Method - In a pan fry Cumin Seeds, Dried Red Chillies, Coriander Seeds and Fennel Seeds (Saunf) on low heat till they become slightly dark and fragrant.Grind it to a coarse powder.
Next in a big kadai, add oil and add finely chopped onions  and fry it.
Add ginger garlic paste. 
Next add tomato puree to the pan and cook. Next add the masala powders. Next add capsicum to the gravy. 
Add 1 Cup water to the gravy and cook for a few minutes, add salt and sugar.
Mix well. Once it blends well  add the Paneer cubes. Cover the pan with a lid and cook  till the Paneer is cooked, top it with cream, garnish with corinder leaves and serve it hot with any Indian Bread like Naan, paratha or simple chapathis.

Gongura Chutney

Gongura chutney is an interesting accompaniment for rasam rice or Indian breads, healthy and tangy. A must try out!  It is called Red sorrel in English or Ambadi in Marathi. It is sour to taste and loaded with Vitamin C! 


Ingredients


  •    Gongura/ Red Sorrel Leaves  – 2 cup (washed,cleaned)
  •    Red chillies – 4-5
  •    Fenugreek /Menthya powder -1/2 tsp
  •    Turmeric Powder –a pinch
  •     oil -3-4 tbsp
  •    Salt as required

   For the seasoning

   Oil - 1 tbsp
   Mustard seeds– 1 tsp
   Hing– a pinch


Method - In a kadai, dry roast menthya/fenugreek and grind it to powder. Heat oil add chilies,turmeric,hing, gongura leaves and fry well. Let it cool. Grind it into fine paste,add salt while grinding. 

Next prepare seasoning-heat oil in a kadai,add mustard seeds, once done, add the paste and fry till 10 minutes. Add menthya powder and mix.

Enjoy with Akki rotti, chapati or rice.

Healthy Burger

Healthy Burger is a simple and easy recipe and am sure you all will love to make and enjoy it with your kids. Get their help to assemble the burger and it will a happy family time ! Healthy Burger has a mix of vegetables and aloo patties with cheese a perfect heavy meal. Cheese is for kids though, elders can skip it or enjoy and go for a run! 
Ingredients:
Aloo tikki burger, healthy burger
Healthy Burger
  • Aloo peas tikki
  • Mayonnaise 
  •  Tomato sauce
  • Green chutney (ignore for kids)
  •  Burger buns-4
  •  Cucumber slices (1 for each burger)
  • Capsicum slices  (1 for each burger)
  • Tomato slices (1 for each burger)
  • Onion slices  (1 for each burger)
  • Cheese slice ( (1 for each burger)
Method- Prepare the patties and keep it aside. Cut the burger bun in half and  lightly roast the burger bun with little butter. Apply the sauce on both sides. If you like it spicy apply green chutney. Next start assembling the burger-keep the patties, place tomato, cucumber and onion slices, cheese slice over this, cover it with bun and press lightly. Enjoy Healthy Burger with ketchup.

Amla Murubba

‘Amla or Nellikayi as we all know is said to be a super fruit loaded with nutrients. It is immensely beneficial for our health, hair, and skin. It helps to build immunity and delays aging. You can make various recipes using Amla.

Here is Amla Murubba. A perfect dish for your kids to enjoy with chapati. Enjoy this khatta Meeta yummy and deliciously sweet Amla recipe.

Ingredients


  • Amla grated-1 big cup
  • Sugar-1/2 cup
  • Water
  • Cardamom Pwd/Elachi- 1 tsp
  • Saffron- few strands


Method- Wash the amlas and grated it finely, discarding the seeds. Meanwhile dissolve sugar in water and make syrup. Keep it on low flame, stir in between. Add the grated amlas in this solution. Let it cook till the mix becomes thick.Add cardamom powder and saffron. 
Once cool, store it in glass jar.
Enjoy Amla Murubba with parathas rotis or bread.

Coriander leaves Thokku

Coriander Leaves thokku or Kothambiri thokku is a spicy and tangy accompaniment for your paratha and chapatis. Healthy and tasty and easy to prepare.

Ingredients


  • Fresh coriander leaves - 2 cups 
  • (cleaned and chopped)
  • Red chilies -6-10 (guntur/Byadgi)
  • Tamarind paste-2-3 tsp
  • Jaggery - small piece
  • Salt - for taste
  • Oil - 4-5 tsp
  • Mustard seeds-1 tsp
  • Hing- pinch

Method- 


  • Clean and wash the coriander leaves well and chop them finely. Pick only leaves. Next in a kadai, add oil and fry chilies,tamarind and leaves for 2-3 mins. Once done grind it well. In a kadai, add oil, add mustard and hing, once done add the ground paste and saute well for 10-15mins. Let it cool and you can store it in the refrigerator for a week. Enjoy this tangy thokku with parathas, chapatis or rasam rice.

Potato Smileys

Potato Smileys is simple and easy recipe that can be prepared in less time. Your kids will love your for this.

Ingredients - 

  • Boiled Pototo 4 (mashed)
  • Bread crumbs- 1/2 cup
  • Corn flour -1/4 cup
  • Pepper powder 1/2 tspoon 
  • Oregano-1/2 tsp
  • Cheese-2 tbsp (opt)
  • Chilli pwd 1 tspoon 
  • Salt for taste
  • Oil for frying


Method - In a bowl, add mashed potatoes, add bread crumbs, flour, pepper pwd, chili pwd, salt and mix well. Rest it for 30-45 minutes in fridge.

Take a big ball size and make thick paratha, using cookie cutter, make round shape, make shapes of eyes and mouth (use spoon or straw to make shape) and take it on a separate plate.Repeat for the entire dough. Heat oil in kadai. Fry well till it is golden brown on both sides. Enjoy hot with ketchup,chutney or sauce.

Menthya Hittu Powder/ Methkoot Powder

Enjoy the healthy and easy recipe for making Menthya Hittu. You can find below the recipe on how to make MenthyadaHittu Pudi. It is known as Methkoot in Marathi.



Ingredients
  • Chana dal-1 cup
  • Urad Dal-3/4 cup
  • Wheat-3/4 cup
  • Rice-1/2 cup
  • Jeera-1 spoon
  • Fenugreek-1/4 spoon
  • Hing-1/2 spoon
  • Turmeric-1 spoon


Method-

Dry roast all ingredients separately. Once cool, grind it into fine powder. Store it in airtight container.

You can mix Menthyahittu with white rice, add ghee and enjoy. You can make gojju using this powder.

Peanut Chikki

Peanut chikki, we all grew up enjoying this as kids. This is a very simple easy recipe that can be done in very less time. Healthy and loaded with nutrients, a definate must try during your kids holiday time. Chikki/ gajak or brittle is a perfect treat for adults and kids.


Peanut Chikki
Ingredients
  • 2 cups peanut / groundnut
  • 1½ cup jaggery / gud / bella
  • 2 tbsp water
  • 1/2 mix dry fruits
Method- In a kadai, dry roast the peanut on low flame. Keep stirring till it roasts well uniformly. Once cool, remove the skin and break it into two. Meanwhile in a kadai add the jaggery and add little water and let it melt on low flame. Keep stirring till the entire jaggery melts. Once the syrup is formed, add the peanuts,dry fruits and give it a quick stir till the peanuts are coated well with the syrup. 

In a plate ,add butter paper and pour this mixture over it and pat it to smoothen up. Cut into pieces while it is warm.

Serve once the chikki is completely cooled down. Store the remaining in airtight container.

Palak Stir Fry

Palak Stir Fry is a healthy combination of green palak /spinach leaves with lentils ( tur dal cooked) with mild spices. Easy to make. Enjoy hot with chapati or rasam rice. Spinach or Palak provides healthy nutrients and is rich in iron, vitamins and minerals. It is very important for overall health including skin, hair etc. It is one of the immunity booster foods.

Ingredients
  • 1 bunch Palak/ spinach
  •  (cleaned and chopped finely)
  • 1- 2 dry red chillies
  • 3-4 tbsp grated coconut
  • 1-2 tbsp Cooked Dal
  • salt according to taste
  • 1/2 tsp lemon juice
  • Coriander leaves-few


Seasoning
  • 1/2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 tsp jeera
  • Few curry leaves
  • Pinch-Hing
  • Pinch-Turmeric Pwd


Method: In a pan, heat oil and add the chopped spinach and fry well. Take is aside. Next h
eat the oil in a broad pan. Prepare Seasoning  add mustard seeds, add urad dal, chana dal,Turmeric,hing curry leaves. Add red chillies, saute well. Once done add the chopped Spinach and sauté well. Add salt and mix. Finally garnish it with grated coconut and coriander leaves. Serve hot with rasam rice or chapati. Simple and tasty Palak Stir Fry.

Congress Kadlekai / Masala Kadlekayi

Congress kadlekai / Masala Kadlekayi is a very famous snack from Karnataka and sold mostly in bakeries. It is a easy  snack made from roasted peanuts tossed and seasoned in spice mixture. You can enjoy this with tea or coffee or use it as topping when you make Bhelpuri at home. Simple and easy to make.

Ingredients

Congress Kadlekai / Masala Kadlekayi

  • Raw groundnuts/peanuts – 1 cup
  • Oil – 2 tsps
  • Curry leaves -few
  • Red chilly powder -1/2 tsp 
  • Coriander powder-1/4 tsp
  • Pepper powder -1/4 tsp
  • Turmeric powder -1/4 tsp
  • Hing- one pinch
  • Salt-for taste
Method: In a kadai, add the raw peanuts and  fry them in a low flame until light brown. Keep turning it with a spoon. Once cool, remove the skin of the peanuts by rubbing it with your hands. Try to remove as much as you can. Break it into two pieces.

Next, heat oil in kadai, add curry leaves and fry well. Next add the masala powders and hing. Stir well. Add the roasted peanuts in the kadai. Start tossing the peanuts in the masala such that each peanut is well coated with the spice mix. Do not burn the peanuts. Add salt and mix well.

Voila! your masala peanuts are ready to be enjoyed. Once cool store in airtight container and have fun munching.

Palak Poori / Spinach Poori

Palak Poori is an easy recipe to include healthy greens in your diet. Palak or spinach is a green leafy vegetable that is loaded with iron and vitamins and proteins. Perfect for adults and kids alike. Serve hot with ketchup, chatni or sabzi of your choice. Ideal lunch box recipe! Spinach is an important immunity booster vegetable.


Palak Poori / Spinach Poori 
Ingredients:

  • 1 cup Palak [Boiled]
  • 1/4 cup chickpea flour[Besan]
  • 1 cup Wheat flour
  • 1 teaspoon ajwain
  • 1 tablespoon garam masala
  • 1/2 teaspoon dry mango powder
  • salt to taste
  •  oil
  • Water

Method: Clean the palak well. Chop only the leaves finely. Next in a pan add water and a bit of salt. Add the washed palak leaves and let it boil for 10-15 mins. Once done, let it cool, discard the water and blend it in the mixer. In a bowl,add wheat flour, besan, masala powder, salt and the blanched palak leaves and mix well to make a soft dough. Add water if req. Make puris and deep fry them in hot oil. The puris will be in green color! Serve hot with sabzi of your choice.

Pudina Thokku


Pudina Thokku is a simple tangy spicy side dish for your chapati or bread. Easy to prepare and can be stored for a week.

Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.


Pudina Thokku 
Ingredients
  • Fresh Pudina/Mint Leaves- 1cup 
  • (washed and cleaned)
  • Red chili-10-12 (bydagi/guntur)
  • Tamarind paste-2 tbsp
  • Jaggery-2 tsp
  • Salt-for taste
  • Oil- 2tbps
  • Menthya seeds-few
  • Coriander seeds-few
  • Mustard-1 tsp
  • Hing-pinch


Method- Dry roast the above mentioned items-chana dal,coriander seeds,menthya,red chillies in little oil. Fry the leaves separately. Once cool add the items with jaggery and salt and grind it in paste with very little water.
Once done, add seasoning -heat oil, add hing and mustard once done add to the thokku. 
Enjoy Pudina Thokku with chapati or bread.

Tomato Thokku

Tomato Thokku is tangy spicy made from ripe tomatoes. You can store it for a week. Enjoy it with breads, chapatis or parathas. 

Ingredients
  • 3 tbsp oil
  • 4-5 ripe tomatoes, finely chopped
  • 1 tsp tamarind paste
  • ½ tsp turmeric / haldi
  • 1 tsp methi seeds / fenugreek seeds
  • 1 tsp mustard seeds / rai
  • ½ tsp jaggery / gud
  • 2 tsp Red chili pwd or sarin pudi
Seasoning
  • 2 tsp oil
  • 1 tsp mustard seeds 
  • 2 dried red chilis
  • few curry leaves
  • ½ tsp hing / asafoetida
Method- In a kadai, heat oil and add the mustard and menthya or fenugreek seeds and roast well. Do not burn. Grind it into powder. Next in the kadai, heat oil add chopped tomatoes,fry for 2-3 mins.Next add the tamarind, turmeric and keep stirring. Add water and let it cook on low flame till the tomatoes become very soft and water evaporates. Mash it well,add the roasted powder, jaggery,chili powder and salt and mix well. Prepare seasoning ,heat oil add the mustard seeds, hing,curry leaves, once it is done add it to the thokku.You can now enjoy it with dosa, chapati , idli or bread. Store it in airtight container.

Flaxseeds Chapati

Flaxseeds Chapati is extremely healthy. Loaded with nutrients and high in Omega 3 and rich in dietary fiber, it is essential we add this chapati in our diet. So learn and enjoy making this chapati. It's tasty and nutritious!

Ingredients



  • Wheat flour – 1 cup 
  • Cumin seeds - ¼ tsp
  • Salt - ¼ tsp
  • Flax seeds powder – 2 tbsp 
  • Ghee/Oil– 2 tbsp
  • Water for kneading
Method-

1. First make the flax seed powder. Dry roast the seeds well, keep stirring in between. Allow it to cool. Next grind it into fine powder.

2. In a bowl, now add all the ingredients and knead into soft dough. Cover and keep it for 30 mins. 
3. Next make chapatis. Fry on tava , add oil and flip and once done on both side.
4. Serve hot with sabzi of your choice.

Sweet potato palya/ ಗೆಣಸುಪಲ್ಯ or Shakarakand Sabzi (Hindi)  is most simplest and easiest of recipes but definitely enjoyed by all. You can made various version with sweet potatoes, this is the quick one. Palya is Kannada word for Sabzi or Bhaji.

Sweet potato palya /  ಗೆಣಸುಪಲ್ಯ
Ingredients
  • 3 big sweet potato, sliced fine
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • 5-6 Green Chillies, chopped
  • Few Coriander leaves
  • Few Curry leaves
  • Lemon juice
  • 2 tbsp Oil
  • Salt to taste

Method : 

1. Wash and slice the  sweet potatoes into small pieces. 
2. Heat Oil in pan,add mustard, chanadal, uraddal, hing, tumeric, curry leaves, chilies and fry for some time. 
3. Add sweet potatoes ,and mix. Add salt and mix well, fry for some time. 
4. Garnish with coriander leaves and lemon juice. Add coconut if req. 
5. Serve this Sweet potato palya stir fry hot with rasam rice or enjoy with chapatis too.
