Rice Crisps / Akki Sandige

Rice Crisps / Akki Sandige  an interesting recipe made during summer season . Learn to make sandige / vadams /fryums right from the first level.Make it , fry it and enjoy it.

Rice Crisps
Ingredients 

  • 1 cup rice flour
  • 7 cups water
  • 1 Tsp Hing
  • 8-10 green chilies
  • 1 Tsp cumin seeds
  • 1 Tbsp salt (adjust to taste)
  • 1/2 Tsp oil
  • 2-3 Tbsp buttermilk

Method - Grind green chilies with cumin and keep aside. In a bowl mix rice flour with the remaining water with hands into a smooth liquid dough. Next in a pan  heat 1 cup of water with 1/2 Tsp oil, salt , next add chilies paste and hing. Now slowly add the rice flour mix into this water , keep stirring.Let it cook on low heat , keep on stirring for 10 mins .Switch and let it cool.
Meanwhile in a sheet or plate , sprinkle buttermilk and slowly take the rice mixture and start putting it in form of sandige leaving gaps in between.

Keep it in hot sun or terrace daily till it is completely dry from  all sides. keeping flipping Store in containers.Use as required.

Frying-In a pan heat oil well , add the dried sandige , fry well and enjoy with bisi saaru anna or with tea or coffee.
