Soppu Mudde Palya

Soppu Mudde Palya  is a healthy combination of Tur dal with Greens. (Dantina soppu is  Amaranth leaves or red leaves commonly used in most houses ) Tempered with hing and chilies it is nutritious and tasty. Enjoy with rice or chapati.

             Soppu Mudde Palya 

Ingredients
  • 1 cup finely chopped green
  • Tur Dal-1/2 cup (cooked)
  • 1/2 tsp turmeric
  • Salt-taste
  • Water
  • Coconut-1-2 tbsp
  • Jeera-1/2 tsp
  • Dhania seeds-1/2 tsp
  • green chilies-2-3
  • Tamarind paste-1/2 tsp
  • Jaggery-small piece
Seasoning:
  • 1 tsp oil/ghee
  • 1 tsp mustard seeds 
  • 1/2 tsp jeera
  • 1/2 tsp channa dal
  • 1/2 tsp urad dal
  • hing -pinch
  • curry leaves-few
  • Red chilly-1-2
  • Method :  Cook the greens in water till done. Fry jeera,coriander seeds ,chilies .Next grind these items with coconut . Next in a kadai add oil,prepare the seasoning ,and add greens,cooked dal, tamarind paste,jaggery piece,ground mix and stir. Add salt  and mix well. Cook on low heat for 10-12 mins,stirring in between. Serve hot mudde palya or Dal with Greens with white rice or chapati.

Sandige Chitranna

Sandige Chitranna is an easy seasoned rice variety with crushed sandige/ crisps added to it. Kids will definitely love it. Chitranna is a favorite South Indian Rice variety, you can make variety of chitranna aka one pot meal. This is a very simple one.

Ingredients:
Sandige Rice 
  • 1 cup rice (cooked)
  • 1/4 cup fresh coconut(grated)

  • Seasoning
  • 1 tsp channa dal
  • 1 tsp urad dal
  • 6-7 cashew nuts
  • 2 tbsp peanuts
  • Hing pinch
  • Sandige- 6-7 fried
  • Red chilly-1 (opt)
  • few Curry leaves
  • Few coriander leaves
  • Oil-2 tbsp

Method: 

Fry Sandige well. Keep it aside.
Allow the rice to cool, spread it on a plate. Next heat oil in kadai, roast cashews and peanuts and keep it aside, next add the other items in seasoning, roast well, add sarin pudi  and fry,  add the rice to this seasoning.
Add the grated coconut, salt, cashews and peanuts and mix well.
Saute for 1-2 mins..Crush them and add to the rice. Garnish the rice with coriander leaves.
Serve Sandige Chitranna hot.

            Masala Avalakki

Masala Avalakki is very simple and easy to prepare. It has the nice tangy and spicy flavor loaded with vegetables. This variety is made with Bhath Powder.

Poha (oggarane avalakki ) or seasoned rice flakes are healthy and easy to digest too, just right for all ages.


Ingredients

  • 1 cup poha (flaked rice /avalakki) 
  • 1 cup mixed vegetables (peas,corn,onion
  • capsicum)
  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. Chana dal
  • 1/2 tsp. Urad Dal
  • 1/2 tbsp Peanut
  • 1-2 green chilies, finely chopped (opt)
  • 2-3 Tsp Bhath pwd
  • Few chopped coriander leaves
  • Few curry leaves
  • Hing-pinch
  • Tumeric-pinch
  • Salt to taste
  • 1 tbsp. grated fresh coconut (opt)




Method-
Soak the poha in water for 5 minutes. 
Wash thoroughly and drain the water completely.
Heat oil in a pan, fry peanuts and keep it aside then add mustard seeds, after it splutters, add chana dal/urad dal ,hing,turmeric ,curry leaves and stir fry.
Add green chillies, add vegetables sauté well.
Next add soaked avalakki,salt and mix well.
Add bhath pwd , coconut , coriander leaves mix carefully.
Serve Masala Avalakki hot.

Heerekayi Kootu

Heerekayi Kootu (Heerekai -Turai/Ridgegourd) is a traditional Madhwa South Indian gravy that can be enjoyed with hot rice or chapati. A spicy, healthy gravy.

Kootu is a lentil-vegetables based semi-gravy which is nutritious, protein rich and perfect with some hot rice and ghee and nice papads.

The whole experience is just heavenly!

Ingredients

  Heerekayi Kootu

  • Heerekayi-1 cup finely chopped
  • Moong dal- 1/2  cup cooked
  • For grinding
  • Urad dal – 1 tbsp
  • Jeera – 1 tbsp
  • Pepper-10
  • Rice-1 tsp
  • Red chilies-5-6
  • Shredded coconut – 1/2 cup
  • Hing- 1 pinch
  • Seasoning
  • Oil-1-2tsp
  • Mustard-1/2 tsp
  • Jeera-1/2 tsp
  • Chana dal-1/2 tsp
  • Turmeric-pinch
  • Hing-pinch
  • Curry leaves-few
Method-
In a pan, add little oil fry well the urad dal, pepper, jeera, curry leaves,hing, red chilies later add the  coconut fry for 1-2 mins. 
Grind this roasted mixture by adding little water. 
Meanwhile , stir fry the veggies. 
Once done, add the cooked moong dal, the ground paste and allow to simmer for 5-10 mins. Add salt. Add the seasoning. 
Heat oil in kadai, add mustard,once done add jeera, chana dal, turmeric, hing, curry leaves. Add this to the kootu. 
Serve hot with chapati or enjoy with rice.

Onion Khara Dosa

Onion Khara Dosa

Onion Khara Dosa (Khara: Masala in Kannada ) is healthy, nutritious and filling breakfast. This is a spicy version. Easy to make and enjoyed hot. 

A mix of regular dosa batter  with spices, onion and coconut to give the perfect crispy crepes.

Ingredients:

Dosa Flour
Salt as per taste
Oil
Jeera-1 tsp

To Grind
Coconut-1/4 cup
Red chillies-8-9
Tamarind juice - 1 tbsp
Hing: Pinch
Onion-1/2 cup



Method:

In a pan, fry the items mentioned in to grind.Blend it in mixer with less water. Next in a bowl , take the dosa flour, add the ground paste. Add salt. Mix well. Make dosas. Serve hot with butter and chutney of your choice.

Poori with Aamras / Mango Seekarane- is a combination of Hot Poori with cold Aamras, one delectable recipe that can be enjoyed during weekends in Mango season.

Ingredients:

  • 1 big cup Mangoes (medium sized)
  • 1/2 cup Milk
  • 1/2 tsp Powdered Cardamom/Elaichi
  • Sugar, as per taste
  • Saffron strands-few

Method : 

Peel the skin off the mangoes and cut into very tiny pieces else add them in mixer and grind one round or just squeeze the pulp with your hands, any way you like it. 

It will taste yummy.

Next add sugar, elaichi powder mix well and keep aside.

Just before serving, add the cold milk and mix well.

Add into small bowls and serve with hot pooris/chapatis or enjoy just like that.
