Hurikadle Capsicum Rice

Capsicum Bhath with Hurikadle  / Capsicum Rice is easy and perfect one pot meal. Stir fried capsicum blended with bhath powder and hurikadle in rice tastes delicious.

Enjoy with raita /papad.

Ingredients:

Capsicum Rice with Hurikadle
  • 1 cup rice
  • 1 cup stir fried capsicum (Simla Mirch)
  • 1/2 tsp. mustard
  • 1/2 tsp.chana dal
  • 1/2 tsp. urad dal
  • Hing-Pinch
  • Curry leaves-few
  • Turmeric pwd-pinch
  • 2 tbsp. oil
  • Green Chilies-1-2
  • Salt to taste
  • 2 tbsp. Bhath Powder
  • Dry grated coconut-1 tbsp
  • Hurikadle-few
  • Coriander leaves-few chopped

Method: In a pan add little oil and stir fry capsicum and keep it aside.Cook rice and Spread it on a plate.Heat oil , add mustard seeds, after it splutters ,add chana dal,urad dal,hing,curry leaves, chiles , turmeric and fry until golden brown. Also fry Fried gram (hurikadle) Add the capsicum, bhath powder, salt and mix well.Add rice, and mix well.Garnish with coconut. and coriander leaves Serve hot with raita or papad or enjoy just like that.

Spinach Corn Sandwich

Spinach Corn Sandwich is simple and easy to make. Enjoy as a quick snack or send it as school lunch. It is very important for overall health including skin, hair etc. It is one of the immunity booster foods.

Spinach Corn Sandwich
Ingredients
    • 1 cup cleaned and chopped spinach 
    • 1/2 cup steamed corn
    • 1 tsp Sandwich masala 
    • 1/2 tsp pepper pwd
    • 1-2 chilies (opt)
    • 1/2 tsp oil
    • 8 Bread slices 
    • Butter
    • Grated cheese
    • Salt
    • Green Chutney
    • Ketchup
      Method:In a kadai, heat oil, add palak leaves and stir fry well, once done add salt pepper pwd, add steamed corn  and mix well. Take bread, apply butter and  green chutney, add the palak mix ,add some sandwich masala,add cheese, cover with another chutney-butter spread bread. Serve with  ketchup.

      Bhendi fry Ver III

      Bhendi fry Ver III or Okra fry is simple and easy vegetable ,crispy and tasty too.This is with bhath pwd and groundnut pwd.Kids will love it.

      Ingredients:
      Bhendi fry 
      • 1 cup Bhindi/ Okra 
      • (finely chopped)
      • Seasoning
      • Oil-2-3tbsp
      • 1/2 tsp Mustard
      • 1/2 tsp Jeera
      • 1/2 tsp chana dal
      • 1/2 tsp urad dal
      • Hing-pinch
      • Turmeric-pinch
      • Groundnut pwd-1/2 tsp
      • Bhath pwd-1 tbsp
      • Curry leaves-few
      • Salt-taste
      Method -In a pan ,heat oil,prepare the seasoning-add the items -mustard,jeera,chana dal,urad dal,hing,curry leaves,once done,add the vegetable and fry well till crisp.Add salt groundnut powder,bhath powder and mix well.Serve hot and crispy with chapati or rasam rice.

      Avarekayi Maaja

      Avarekayi or Flat beans / Hyacinth Bean (are available during the winter months in Bangalore.And we can prepare loads of recipes using these beans. These beans are tasty and has a unique flavor. If its December you gotta have Avarekayi. There is also Avarekayi Mela/festival in Bangalore during the season.

      We can add it to Upma, Poha , Akki Rotti or Pongal.

      Mint Paratha /Pudina Paratha

      Mint Paratha /Pudina Paratha is simple and easy lunch box recipe for kids or adults. A dash of fresh greens  to your daily diet. Enjoy this flavoured and delicious chapati with Raita or Sabzi of your choice.

      Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.
      Ingredients

             Mint Paratha /Pudina Paratha



    1. 1.5 cups of wheat flour 






    2. Fresh Pudina/Mint leaves  -1/2 cup






    3. Garam masala pwd-1 tsp






    4. Dhania Jeera pwd-1 tsp


    5. Curds-1-2 tsp

    6. Turmeric-1/2 tsp

    7. Jeera-1/2 tsp


    8. Ajwain-1/2 tsp

    9. Salt to taste

    10. 1 tsp. of ghee

    11. Oil as needed

    12. Method

      Fry the Pudina leaves in little oil. Next grind it coarsely.In a bowl combine all the ingredients with the flour ,add yogurt  and knead into smooth dough, add water as req. Add oil and knead it again and keep it covered for sometime. Make chapatis. Heat a skillet (tava) , gently put in the chapati add oil ,turn on both sides till done. Serve very hot with raita.
