Cucumber Thalipeeth / Kakdi Thalipeeth

Cucumber Thalipeeth

Cucumber Thalipeeth aka Kakdi Thalipeeth ( काकडीचे थालिपीठ)  is a healthy and wholesome breakfast that gives you nutrition and calories all in one shot! Blend of cucumbers in mix of flours, dash of spices and voilà is a perfect breakfast for your busy day ! Thalipeeth is Indian flat bread.


Ingredients

  • Cucumber - 4 (medium sized)
  • Rice flour - 1/4 cup
  • Wheat flour-1/ 4 cup
  • Gram flour (besan) - 1/4 cup
  • Jowar flour -1/4 cup
  • Onion - 1 chopped
  • Cumin seeds (jeera) - 1 tsp
  • Green chillies - 4-5 (chopped finely)
  • coriander leaves - few
  • Salt to taste
  • Oil 

Method- In a bowl ,grate the cucumbers. Next add rice flour, gram flour and the other flours chopped onions, cumin seeds, green chillies, coriander leaves and salt. Mix well with the water from the cucumber. The dough  should be soft Keep covered for 10 mins.Take 1tsp of oil, smear around a tava, take dough and spread around it.

Keep this on medium heat, cover and after minute ,add oil around sides or so it will be ready to be taken out. If you want more crispy leave it of little longer.

To make another thalipeeth, hold the pan upside down and run cold water all around it, pan will be cool to make another one by this time(be careful while running water onto hot vessel, water will start sizzling as soon as it hits the pan).

Serve this soft thalipeeth hot with chutney /sauce of your choice and dash of butter.

Masala Poha is very simple and easy to prepare.It has the nice tangy and mildy spiced flavor .Dash of lemon with spices perfect for your breakfast.Poha (oggarane avalakki ) or seasoned rice flakes are healthy and easy to digest too, just right for all ages.

                  Masala Poha

Ingredients
  • 1 cup poha (flaked rice /avalakki) 
  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. Chana dal
  • 1/2 tsp. Urad Dal
  • 1/2 tbsp Peanut
  • 1-2 green chilies, finely chopped (opt)
  • 1/2 tsp dhania jeera pwd
  • 1/2 tsp Red chili pwd
  • Few chopped coriander leaves
  • Few curry leaves
  • Hing-pinch
  • Tumeric-pinch
  • Salt to taste
  • Sugar-pinch
  • 1 tbsp. grated fresh coconut (opt)
  • Lemon juice 


Method-Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely.Heat oil in a pan, fry peanuts and keep it aside then add mustard seeds, after it splutters, add chana dal/urad dal ,hing,turmeric ,curry leaves and stir fry.Add green chillies, sauté well.Next add soaked avalakki,salt and mix well.Add bhath pwd ,coconut ,coriander leaves mix carefully.Add lemon juice.Serve hot.

Navaratri  or Dassera is one of the most important festival of Hindus. People worship Durga Devi in Northern India and in South India it is celebrated as Bombe Pooje (Festival of Dolls ) The traditional dolls are arranged in steps form featuring characters of Hindu Mythology. The most important dolls are the Pattada Gombe – the main dolls and a kalash is also placed Goddess Saraswati is also worshipped along with books.Fasting and praying form an important part of this festival.

Aloo Simla Mirch Peanut masala

Aloo Simla Mirch Peanut masala is a delicious combination for Indian breads.It can be made in variety of ways.This is made by blending aloo and simla mirch in roasted peanut masala powder.


Aloo simla mirch peanut masalaIngredients

1 potatoes (boiled and diced)
2 capsicums 
1/2 tsp cumin seed 
1/2 tsp mustard
1/2 tsp chana dal
1/2 tsp urad dal
Hing pinch
1/2 tsp red chili powder 
1 tsp turmeric powder 
1/2 tsp dhania jeera powder 
1 tsp Bhath powder
2 tsp Peanut powder
few coriander leaves (finely chopped) 
1-2 tbsp Oil
Salt 
  • Method-
  • Roast peanut well in a kadai.Ground it in the mixer and keep it aside.(You can also add red chillies along with it)
  • Heat oil in a pan. Add cumin and mustard,chana dal,urad dal ,hing, and fry till done ,add capsicum and sauté for some time.Next add diced potatoes ,the masala pwd ,salt and mix well.Garnish  with coriander leaves and serve hot with naan or roti.

ChowChow Poha / Seemebadnekayi Avalakki

ChowChow Poha  or Seemebadnekayi Avalakki is spicy and quick breakfast recipe.Poha (Oggarane Avalakki ) is easy to cook, adding vegetables to it makes it more nutritious and tasty.This one is with humble ChowChow or Chayote has a unique taste which makes the avalakki delicious.

Seemebadnekayi Avalakki 



Ingredients:


  • 1 cup poha ((flaked rice /avalakki)
  • 1 cup Chow Chow finely chopped)
  • 1/2 cup onion finely chopped
  • 3-4  green chillies, finely chopped
  • Salt to taste

For Seasoning:


  • 2 tbsp. oil
  • 1/2 tsp. mustard
  • 1/2 tsp.cumin seeds
  • 1 tsp chana dal
  • 1 tsp. Urad dal
  • 2 tsp. peanuts
  • Hing- a pinch
  • Curry leaves-few
  • Turmeric pwd-pinch

For Garnishing
2 tbsp. grated coconut
Few coriander leaves


Method: In a pan , Stir fry chow chow well in little oil keep it aside.
Soak the poha in water for 5-10min. Wash  and drain the water completely.
Heat the oil in the pan, fry the peanuts and keep it aside .
Next add seasonings and fry till done.
Add green chillies and onion and stir fry.
Once done add the poha and mix well.
Add salt, coconut ,peanuts ,stir fried chowchow
and coriander leaves to the poha.
Add lemon juice ,add bhath pwd and mix well . Serve hot.

Masala Sabudana

Masala Sabudana  can be made as filling breakfast for a good start of your day.Absolutely delicious and tasty,try it out!!. An easy gluten free vegan delight! A blend of your favorite veggies with delicious sabudana makes it perfect !


1 cup sabudana(sago) 
1-2 Green Chillies finely chopped
Few peanuts fried
1 boiled and peeled potato
1/4 cup peas steamed
1/4 cup capsicum 
1 chopped onion (exclude if fasting)
2 tsp Oil
1 tsp Jeera /Cumin seeds
1 Pinch Hing (asafoetida) 
1/2 tsp mustard seeds
1/2 tsp chana dal
1/2 tsp urad dal
2 tbsp Bhath pwd 
1 tsp Lemon juice 
Salt to taste 
Coriander leaves-few
Curry Leaves-few


Method
  • Wash the sabudana in water 2 -3 times. and soak it in water for about 3-4 hours in water and use it when they become soft and double in volume.
  • Heat the oil/ghee in a pan fry peanuts and keep it aside,next add cumin seeds,mustard seeds,chana dal urad dal and hing. Once done add the green chillies and curry leaves.
  • Add the chopped potatoes and onion,capsicum and stir well. Let them cook till they are light brown on the outside. Add sabudana mixture and mix gently. Let it cook for 10 - 15 mins .
  • Then add fried peanuts,steamed peas ,salt and Bhath pwd .Mix well.
  • Add the grated coconut  (opt) and garnish with coriander leaves.
  • Sprinkle some lemon juice over it and serve hot.

Masala Karela fry

Masala Karela fry is a simple ,spicy vegetable side dish for Chapati or Rasam Rice.Karela or Bitter gourd has its distinct bitter taste but once blended with groundnut  powder and spices , it tastes awesome.Enjoy!

Ingredients:


  • Bitter Gourd-3-4 (sliced)
  • Bhath Pwd-2 tsp
  • Sambhar pwd-1 tsp
  • Groundnut powder-1-2tbsp
  • Salt to taste
  • Oil 2-3 tbsp


For Seasoning:


  • 2 tbsp. oil
  • 1/2 tsp. mustard
  • 1/2 tsp.cumin seeds
  • 1 tsp chana dal
  • 1 tsp. Urad dal
  • Hing- a pinch
  • Curry leaves-few
  • Turmeric pwd-pinch


Method:
Roast groundnuts on low heat and grind it into powder.Keep it aside.Slice the bitter gourd in to thin slices.In a pan  add oil and roast the karela well.Next add bhath and sambhar powder,groundnut powder,salt and mix well. Fry till it becomes crip.Heat oil in a pan and prepare seasoning add it to the karelas.Enjoy with hot rasam rice or chapati.

(You can remove the seeds)

Gorikayi Aloo Masala Bhath / ClusterBeans Aloo Masala Rice is spicy rice variety An easy one pot meal made with gavar/cluster beans with roasted potatoes and homemade bhath masala powder.Nutritious and healthy.

Ingredients: 

Gorikayi Aloo Masale Bhath
Gorikayi Aloo Masala Bhath / ClusterBeans Aloo Masala Rice
  • 1 cup Cooked Rice 
  • 1/2 cup chopped gorikayi (gavar/clusterbeans)
  • 1/2 cup thinly sliced potatoes
  • salt as per taste
  • Dry coconut-2 tsp


Seasoning


  • 2 tbsp Oil
  • 1 tsp Mustard(sasive)
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 2-3 tbsp Bhath Masala pwd
  • 5-6 Curry leaves
  • Turmeric pwd-pinch
  • Hing-pinch




Method: Cook rice and Allow the rice to cool,spread it on a plate.Heat oil in a kadai. Add mustard seeds,turmeric, curry leaves ,hing,chana dal,urad dal.Once done add chopped gorikayi and potatoes to the above seasoning. Saute frequently till done.Next add salt and masala powder. Mix well.Add the cooked rice .Mix well.Cover and cook on low heat.Granish with dry coconut.Serve hot.



(you can add MTR Vangi Bhath pwd also)

  • Toor dal-1/2 cup (cooked)
  • Sambar Pwd-2 tbsp 
  • Coconut-1/2 cup
  • Tamarind paste-1 tsp
  • Salt-for taste

  • Seasonings
  • Oil-1-2 tsp
  • Mustard seeds-1/2 tsp
  • Hing-pinch
  • Cury leaves-few
  • Turmeric pwd-pinch
  • Red chillies-1-2 (opt)

Method-  Pressure cook Toor dal and green moong well.Cook greens in water for 10-15 mins.

Grind coconut and sambar powder and keep it aside.Next in a vessel,mix the dal,kadlekalu and soppu ,add tamarind paste, salt and the ground paste ,and mix well.Let it boil well for 10 mins,simmer , prepare the seasoning.Add it to the sambar,mix.Serve hot with rice or chapati

Sihi Kumbalkayi Palya /Sweet Pumpkin Sabzi

Sihi Kumbalkayi (Sweet Pumpkin ) Aloo palya is a delicious combination prepared in-South Indian style with coconut and chillies.Simple and tasty.Enjoy with Chapati or rasam rice.Slightly sweet ,mildy spiced.Palya is kannada word for sabzi.



  • 2 Potatoes,(cut in big cubes)
  • 1 cup Sihi Kumbalkayi (cut in big cubes)
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • 5-6 Green Chillies, chopped
  • Few Corianderleaves
  • Few Curry leaves
  • Grated coconut-2 tbsp
  • 2 tbsp Oil
  • Salt to taste

Method: Heat Oil in pan,add mustard,chanadal,uraddal,hing,tumeric,curry leaves,chilies and fry for some time.Add potatoes and sweet pumpkin and fry well.Cover for 5-10 mins.Check if the veggies have turned soft , next add salt and mix well , fry for some time.Garnish with corainder leaves and coconut .Serve this pumpkin stir fry hot with rasam rice or enjoy with chapatis too.

Ingredients:

Soppu Mudde Palya

Soppu Mudde Palya  is a healthy combination of Tur dal with Greens. (Dantina soppu is  Amaranth leaves or red leaves commonly used in most houses ) Tempered with hing and chilies it is nutritious and tasty.Enjoy with rice or chapati.

             Soppu Mudde Palya 

Ingredients
  • 1 cup finely chopped green
  • Tur Dal-1/2 cup (cooked)
  • 1/2 tsp turmeric
  • Salt-taste
  • Water
  • Coconut-1-2 tbsp
  • Jeera-1/2 tsp
  • Dhania seeds-1/2 tsp
  • green chilies-2-3
  • Tamarind paste-1/2 tsp
  • Jaggery-small piece
Seasoning:
  • 1 tsp oil/ghee
  • 1 tsp mustard seeds 
  • 1/2 tsp jeera
  • 1/2 tsp channa dal
  • 1/2 tsp urad dal
  • hing -pinch
  • curry leaves-few
  • Red chilly-1-2
  • Method :  Cook the greens in water till done. Fry jeera,coriander seeds ,chilies .Next grind these items with coconut .Next in a kadai add oil,prepare the seasoning ,and add greens,cooked dal, tamarind paste,jaggery piece,ground mix and stir .Add salt  and mix well.Cook on low heat for 10-12 mins,stirring in between.Serve hot mudde palya or Dal with Greens with white rice or chapati.

Sandige Chitranna

Sandige Chitranna is a easy seasoned rice variety with crushed sanding added to it . Kids will definitely love it.Chitranna is a favorite South Indian Rice variety, you can make variety of chitranna aka one pot meal.This is a very simple one.


Ingredients:
Sandige Rice 
  • 1 cup rice (cooked)
  • 1/4 cup fresh coconut(grated)
  • salt to taste
  • Fried Sandige

Seasoning
  • 1/2 tsp mustard seeds
  • 1/2  tsp cumin seeds
  • 1 tsp channa dal
  • 1 tsp urad dal
  • 6-7 cashew nuts
  • 2 tbsp peanuts
  • Hing pinch
  • Sarin pudi-1-2 tsp
  • Red chilly-1 (opt)
  • few Curry leaves
  • Few coriander leaves
  • Oil-2 tbsp


Method:  Allow the rice to cool ,spread it on a plate.Next heat oil in kadai,roast cashews and peanuts and keep it aside ,next add the other items in seasoning ,roast well ,add sarin pudi  and fry ,  add the rice to this seasoning.Add the grated coconut,salt cashews and peanuts and mix well.Saute for 1-2 mins.Fry Sandige well.Crush them and add to the rice .Garnish the rice with coriander leaves.Serve hot .

Heerekayi Kootu

Heerekayi Kootu (Heerekayi -Turai/Ridgedgourd) is a traditional South Indian gravy that  can be enjoyed with hot rice or chapati.A spicy, healthy gravy.

Ingredients

                  Heerekayi Kootu

  • Heerekayi-1 cup finely chopped
  • Moong dal- 1/2  cup cooked
  • For grinding
  • Urad dal – 1 tbsp
  • Jeera – 1 tbsp
  • Pepper-10
  • Rice-1 tsp
  • Red chilies-5-6
  • Shredded coconut – 1/2 cup
  • Hing- 1 pinch
  • Seasoning
  • Oil-1-2tsp
  • Mustard-1/2 tsp
  • Jeera-1/2 tsp
  • Chana dal-1/2 tsp
  • Turmeric-pinch
  • Hing-pinch
  • Curry leaves-few
Method-In a pan,add little oil fry well the urad dal, pepper, jeera, curry leaves,hing ,red chilies later add the  coconut fry for 1-2 mins .Grind this roasted mixture by adding little water.Meanwhile , stir fry the veggies .Once done ,add the cooked moong dal,  the ground paste and allow to simmer for 5-10 mins. Add salt. Add the seasoning.Heat oil in kadai,add mustard,once done add jeera,chana dal,turmeric,hing,curry leaves.Add this to the kootu.Serve hot with chapati or enjoy with rice.

Onion Khara Dosa

Onion Khara Dosa

Onion Khara Dosa (Khara: Masala in Kannada ) is healthy , nutritious and filling breakfast.This is a spicy version.Easy to make and enjoyed hot.A mix of regular dosa batter  with spices,onion and coconut to give the perfect crispy crepes.

Ingredients:

Dosa Flour
Salt as per taste
Oil
Jeera-1 tsp

To Grind
Coconut-1/4 cup
Red chillies-8-9
Tamarind juice - 1 tbsp
Hing: Pinch
Onion-1/2 cup



Method:

In a pan,fry the items mentioned in to grind.Blend it in mixer with less water.Next in a bowl , take the dosa flour ,add the ground paste.Add salt .Mix well. Make dosas. Serve hot with butter and chutney of your choice.
