Peanut Chaat / Masala Kadlekayi

Peanut Chaat / Masala Kadlekayi Chaat is quick and easy chaat recipe. Made with Congress Kadlekayi, a very famous snack found in bakeries in Bangalore. This one is healthier version with dash of lime, onions and cucumber making it more tasty.

Enjoy with hot cup of tea/coffee or enjoy while reading a book or watching your favourite movie.

Prep Time: 15 mins

Ingredients:



Peanut Chaat / Masala Kadlekayi

  • 1 cup congress Kadlekayi
  • 1 onion chopped
  • 1/2 cup cucumber
  • Few coriander leaves (garnish)
  • Lime juice -1/2 tsp
  • Salt-for taste


    Method In a bowl, add the above ingredients - congress kadlekayi, chopped cucumbers, onions, salt and mix. 


    Top it up with coriander leaves and lemon juice and mix and serve with hot cup of tea or coffee .




    (You can add  shredded raw mango /sev and make it more tangy )

    HesaruKaalu Usli / Moong Usal / Sundal

    HesaruKaalu Usli / Moong Usal is  nutritious and healthy recipe which can be enjoyed by  kids as well as elders, enjoy with chilled curds. Moong beans are green in color and loaded with nutrients.

    Moong Beans have to be soaked for 1-2 hours since it reduces the cooking time. You can pressure cook for 10 mins. Do not overcook as it will be all mashed up.

    Ingredients:
    HesaruKaalu Usli / Moong Usal /Sundal
    Hesarukaalu Usli
    • 1 cup Sprouted Moong/Hesaru kaalu
    • Fresh coriander leaves-few 
    • 1-2 tbsp Grated Coconut, fresh
    • Salt -as per taste

    Seasoning/tadka
    • Oil
    • few Curry leaves
    • 1/2 tsp Mustard seeds
    • 1/2 tsp jeera
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 5-6 finely chopped  green chilies
    • Hing-pinch
    • Turmeric-pinch

    Method: Mix sprouted moong, salt. Season with mustard seeds, jeera, chanadal, uraddal, curry leaves, green chilies and hing. Add fresh grated coconut,coriander leaves and mix well and serve with chilled curds.

    Kulith / Hurali Usli / Sundal

    Hurali Usli or ಹುರಳಿ Horsegram Salad or Kulith Usal is  nutritious and healthy recipe which can be enjoyed by  kids as well as elders. Horsegram is a legume variety known as Kulith in Marathi.

    Ingredients:
    Horsegram Salad , Huruli Usli,Kulith usal
    Huruli Usli
    • 1 cup Huruli / Horsegram (boiled)
    • Fresh coriander leaves-few 
    • 1-2 tbsp Grated Coconut, fresh
    • Salt -as per taste

    Seasoning/tadka
    • Oil
    • few Curry leaves
    • 1/2 tsp Mustard seeds
    • 1/2 tsp jeera
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 5-6 finely chopped  green chilies
    • Hing-pinch

    Stuffed Bhindi

    Stuffed Bhindi or Bharwan Bhindi is delicious side dish for Indian breads. The spices stuffed in the Lady's finger or Okra and fried is yummy, tangy and tasty. Enjoy!!  


    Ingredients:

    Stuffed Bhindi

                       Stuffed Bhindi 

    • Lady'sfinger /Bhindi-25-30
    • 2-3 tbsp oil


    Stuffing masala

    • 1 tsp amchur pwd
    • 1 tbsp dhania-jeera pwd
    • 1 tsp Chili pwd
    • 1-2  tbsp Veg Bhath pwd
    • Turmeric-pinch
    • salt 
    • Tamarind paste-1-tsp


    Method-  Mix all the masala mentioned under stuffing ingredients and keep it aside. Next carefully trim the sides and slit the bhindi vertically. 
    Fill in the masala in the bhindi.
    Heat oil in a kadai.Place the stuffed bhindi and fry on low heat till done.
    Serve Stuffed Bhindi hot with Indian Breads.

    Simla Mirch Bhajia / Capsicum Fritters

    Simla Mirch Bhajia (Capsicum Fritters) is a  spicy starter/snack that can enjoyed by all of us. 

    If you are bored with the normal onion /Aloo bhajjis, try this delicious, perfectly flavoured Capsicum fritters.

    Simla Mirch Bhajia / Capsicum Fritters


    Ingredients

    • 1  Large Capsicum cut finely
    • 1-2  tsp red chilli pwd /Bhath pwd
    • 1/2 tsp tumeric pwd
    • 1 tsp Dhania Jeera Pwd
    • 1 tsp of dry mango powder 
    • (Everest Amchur)(opt)
    • 1/4 tsp  garam masala 
    • 1/4 tsp ajwain
    • 3 tbsp gram flour (besan)
    • 1 tbsp rice flour
    • salt for taste
    • Oil for frying


    Method-

    Take a bowl combine all the ingredients and mix well. 
    Add little water, add cut capsicum and mix well ,the flour and capsicum should blend and be well coated and be dry. 
    Heat a little oil and add it to this batter and mix it well.
    Keep it for sometime.
    In a kadai heat sufficient oil for frying. 
    Slowly add the capsicum besan mix in batches in the hot oil. 
    Fry till golden brown on both sides. 
    Drain on absorbent paper. 

    Serve hot spicy, crispy fried Simla Mirch Bhajias with ketchup or chutney of your choice.

    You can enjoy these with simple Rasam Rice too!.. Anyway you like it, you will surely enjoy the taste.

    Bread Dosa

    Bread Dosa is an easy instant dosa for morning breakfast, healthy mix of semolina with bread and spices. Enjoy hot with chutney or pickle.


    Ingredients:

    • 1/2 cup Chiroti rava (fine rava)
    • 4 slices bread 
    • (cut into small pieces and sides discarded)
    • 1-2 tsp jeera
    • Curds-1/4 cup
    • salt to taste
    • Corainder leaves-few chopped
    • Green chillies-5-6 finely chopped
    • water
    • Onion-1 finely chopped


    Method:

    In a bowl, mix rava, curds and bread pieces salt and keep it aside for 20 mins. 
    Next add all the other ingredients-jeera, chillies, onion, coriander leaves  
    and water and mix to form the dosa batter. 
    Heat the tava/skillet and make the dosas, add oil to make it crisp by carefully 
    turn both sides till golden brown. 

    Serve Bread Dosa hot with chutney /pickle or enjoy it JLT!
