Kabuli Chana Chaat

Kabuli Chana Chaat  is a nutritious , easy and simple snack item.The chaat is a mix of boiled chana tossed with onions, tomatoes and mild spices. 

Kabul Chana is Chickpea , a legume variety, healthy and rich in proteins. Healthy food for kids as well.

Ingredients
  • Kabul Chana– 1 cup
  • (cooked soft )
  • Tomatoes-1/2 cup (chopped)
  • Onion-1 /2 cup (chopped)
  • Chaat masala-1 tsp
  • Red chili Pwd-1/2  tsp
  • Green chutney-1 tsp
  • Oil-1-2 tsp
  • Salt-for taste
  • Lemon juice-1/2 tsp
  • Sev-garnishing
MethodIn a bowl, add the above ingredients-chana ,tomato, onions, masala pwds, chutneys and mix well. Top it up with sev and serve immediately.

Kadle Kalu Soppu Palya

Kadle Kalu Soppu Palya  is a healthy combination of kala chana with Greens. (Dantina soppu is  Amaranth leaves or red leaves commonly used in most houses ) Tempered with hing and chilies it is nutritious and tasty. Enjoy with rice or chapati.

Ingredients
Seasoning:
  • 1 tsp oil/ghee
  • 1 tsp mustard seeds 
  • 1/2 tsp jeera
  • 1/2 tsp channa dal
  • 1/2 tsp urad dal
  • hing -pinch
  • curry leaves-few
  • Red chilly-1-2
  • Method :  Cook the greens in water till done. In a kadai and add greens and cooked kala chana add bhath pwd , coconut and mix. Add salt  and mix well. Cook on low heat for 5-10 mins. Heat oil in a pan,add the seasoning items ,once done add to the sabzi. Serve Kadle Kalu Soppu Palya hot with white rice or chapati.

Capsicum Sandwich

Capsicum Sandwich is simple and easy to make.Enjoy as a quick snack or mini dinner.


Capiscum Sandwich
Ingredients
    • 1 cup chopped capsicum
    • ½ onion – chopped finely
    • 3-4  green chilies–chopped finely
    • ½ tsp jeera
    • ¼ tsp mustard
    • ¼ tsp turmeric powder
    • 1/2 
    • Pinch Hing
    • a few chopped coriander leaves
    • Sandwich masala 
    • 8 Bread slices 
    • Butter
    • Salt
    • Green Chutney
    • Ketchup
      Method:In a kadai,heat oil,add mustard seeds,cumin seeds,green chilies,curry leaves,hing, tumeric ,add onions, capsicum and stir fry well ,once done add salt,coriander leaves and mix well.Take bread,apply butter and  green chutney, add the capsicum mix ,add some sandwich masala,cover with another chutney-butter spread bread.Grill in toaster.Serve hot with chutney or ketchup.You can also add cheese to make it more tastier.

      Mavinakayi Avalakki / Raw Mango Poha

      Mavinakayi Avalakki or Raw Mango Poha is spicy and quick breakfast recipe.Poha (Oggarane Avalakki ) is easy to cook, adding vegetables to it makes it more nutritious and tasty.This one is with raw mango and gives it a nice tangy spicy taste. Enjoy !!

      Mavinakayi Avalakki
      Ingredients:

      1 cup poha ((flaked rice /avalakki)
      1 capsicum (finely chopped) (opt)
      5-6 green chillies, finely chopped
      3-4  tbsp. grated raw mango shreds
      Salt to taste

      For Seasoning:
      1 tbsp. oil
      1/2 tsp. mustard
      1/2 tsp.Jeera/cumin seeds
      1 tsp chana dal
      1 tsp. Urad dal
      2 tsp. peanuts
      Hing- a pinch
      Curry leaves-few
      Turmeric pwd-pinch

      For Garnishing

      1 tbsp grated fresh coconut
      Few coriander leaves


      Method: Soak the poha in water for 5-10min. 
      Wash  and drain the water completely.
      Heat the oil in the pan, fry the peanuts and keep it aside .
      Next add seasonings and fry till done.
      Add green chillies and capsicum and stir fry.
      Once done add the poha and mix well.
      Add salt, coconut ,raw mango shreds peanuts and coriander leaves to the poha.
      Mix well  and serve hot.

      Dodda Patre Tambuli /Dodda Patre Soppu Raita

      Dodda Patre Tambuli  ( Coleus aromaticus )  is special herb used for medicines for cough etc.The same is used here to make Raita or tambuli in Kannada.It is called as Patharchur in Hindi or Pan Ova in Marathi.


      Ingredients

      • Dodda Patre leaves : 8 to 10
      •  (washed and chopped)
      • Jeera : 1 tsp
      • Kala Miri-3-4
      • Green chilly :1 
      • Curds : 1 Small cup
      • Fresh Coconut : 1 tbsp (grated)
      • Salt : to taste
      • Seasoning
      • Oil-1tsp
      • Curry leaves : few
      • Mustard-1/2 tsp
      • Hing-pinch


      Method : In a pan heat oil add jeera,pepper once done add the dodda patre leaves and fry them for 2-3 mins .Next grind the above along with coconut and chilly with little water to a fine paste.Add this mix to curds.Add salt and mix well.Next season with items mentioned under seasoning.Serve with hot rice.

      Sihi Kumbalkai Kootu/Sweet Pumkin curry

      Sihi Kumbalakai Kootu is yummy tasty curry that can be enjoyed with hot rice or chapati as well. A bit of sweet , spicy and tangy all in one curry. Sihi Kumbalakai or Sweet Pumkin/ ಸಿಹಿ ಕುಂಬಳಕಾಯಿ is called as Kaddu in Hindi. Kootu is a lentil-vegetables based semi-gravy which is  nutritious, protein rich and  perfect with some hot rice and ghee and nice papads. The whole experience is just awesome! A must try in winter months..



      Sihi Kumbalakai Kootu,kaddu sabzi
      Sihi Kumbalkayi Kootu
      Ingredients:

      1 cup Sweet pumpkin
      (deseeded and diced )
      1 tsp Jaggery
      1/4 tsp Tamarind paste
      Salt as per taste


      For Grinding


      2-3 tsp Coriander seeds
      1/2-1 tsp Jeera
      1-2 Kala miri
      2-3 Dry red chillies
      3-4 tbsp Grated coconut, Fresh

      For seasoning

      1 tsp Mustard
      1-2 tsp Ghee
      1-2 strands Curry leaves
      Hing-pinch
      Turmeric-pinch


      Method: 

      Wash and cook the pumpkin till soft. Next grind the items mentioned under to grind into a paste. Add it to the cooked pumpkin. Next add tamarind paste, jaggery and salt  add water if req, simmer for 10-15 mins. Season with the mustard ,hing and curry leaves. Enjoy this kootu hot with rice.

      Mango Banana Milk Shake

      Mango Banana Milk Shake is healthy and tasty drink. Enjoy this healthy mix of fruits as after school snack for kids.

      Ingredients
      • Ripe Mango - 1
      • Banana-1
      • Milk - 1 cup 
      • Sugar - 2-3 tsp 
      • Elachi pwd-pinch

      Method- Peel the mango and banana. Chop into small pieces. Add along with other  items in blender. Blend till smooth. Serve chilled.

        Bendekayi Gojju

        Bendekayi Gojju (Gojju -Kannada-word for Tamarind based curry) is delicious ,spicy gravy of stir fried Bhindi  (Ladies finger or okra ) with tangy tamarind. Enjoy with chapati. Gojju is a traditional dish in South Indian homes. Bendekai Kayirasa is healthy and tasty, an easy substitute for the normal palyas or sabjis.

        Ingredients
        Bendekayi Gojju,Bhendi curry,okra fry
        Bendekayi Gojju
        1. Bendekai-1 cup (finely chopped)
        2. Oil-2 tspn
        3. Mustard – 1/2 tspn
        4. Jeera-1/2 tspn
        5. Chana dal-1 tsp
        6. Urad Dal-1 tsp
        7. Hing-pinch
        8. Turmeric pwd-1/2 tsp
        9. Tamrind juice-1-2 tbsp
        10. Curry leaves few
        11. Rasam pwd-1-2 tbsp
        12. Gojju pwd-1tbsp
        13. Jaggery-1 tsp
        14. Dry coconut-1-2 tsp
        15. Salt to taste
        Method-In a kadai, add oil and fry bhindi well. Keep it aside. Next heat oil in a pan and add mustard,chana dal,urad dal ,hing,turmeric pwd,curry leaves once done add Rasam (Saaru) powder,gojju pwd ,tamarind juice,jaggery,salt,water and mix well . Add fried bhindi and mix well. Cook for 2 – 3 minutes till the gravy thickens. Add dry coconut and mix
        Serve Bendekayi Gojju  hot with chapati or rice.

        Hurali Saaru / Kulith Rasam

        Hurali Saaru (ಹುರಳಿ ಸಾರು ) is a simple rasam variety made from Kulith / Horsegram . Nutritious and healthy, try it if you want something tangy and spicy accompaniment for rice. Enjoy hot as soup as well.


        Ingredients:
        1 cup Hurali/ Horse gram 
        Hurali Saaru

        (cooked well)
        1 tsp Jaggery
        1/4 tsp Tamarind paste
        Salt as per taste

        For Grinding
        2-3 tsp Coriander seeds
        1/2-1 tsp Jeera
        1/2 tsp Kala miri
        2-3 Dry red chillies
        3-4 tbsp Grated coconut, Fresh

        For seasoning
        1 tsp Mustard
        1-2 tsp Ghee
        1-2 strands Curry leaves
        Hing-pinch
        Turmeric-pinch


        Method: Pressure cook the legumes well.Grind together the items mentioned under for grinding. Keep it aside. Take a pan, add the ground paste to the Hurali. Add water and mix well.Let it boil for some time.Next add tamarind paste, jaggery and salt simmer for 10-15 mins.Season with the mustard ,hing and curry leaves. Enjoy the Kulith Rasam / Hurali Saaru hot with rice.

        Cabbage Capsicum Stirfry

        Cabbage Capsicum Stirfry is an easy sabzi for Indian Breads. Healthy, nutritious and tasty.

        Ingredients
        Cabbage – 1 cup
        Capsicum -1 cup
        Onion-1/2 cup 
        Green chilies-4-5
        (finely chopped)
        Salt – as per taste
        Fresh Coconut shreds-2-3 tbsp


        For seasoning
        Mustard –1/2 tsp
        Jeera -1/2 tsp
        Chana dal-1/2 tsp
        Urad dal-1/2 tap
        Hing-pinch
        Turmeric-pinch
        Curry leaves-few
        Oil-1 tsp

        Method-Chop all vegetables finely.
        Heat a pan with oil and add the items mentioned under the seasoning.
        Add chopped onion, green chilies, curry leaves and fry till transparent. 
        Add all chopped vegetables and mix well; cover and cook for 3 to 5 minutes till vegetables are just done. Add grated coconut, salt and mix.
        Enjoy Cabbage Capsicum Stirfry hot with Rasam Rice or Chapati.

        Bhindi Aloo

        Bhindi Aloo is a delicious combination for Indian breads.It can be made in variety of ways.This is just one of them.Bhindi is Lady's finger in English.

        • 1 cup bhindi (fried well)
        • 1 potato (boiled and diced)
        • 1 onion finely chopped
        • 1 tomato chopped
        • 1/2 tsp cumin seed 
        • 1/2 tsp mustard
        • 1/2 tsp chana dal
        • 1/2 tsp urad dal
        • Hing pinch
        • 1/2 tsp red chili powder 
        • 1 tsp turmeric powder 
        • 1/2 tsp dhania jeera powder 
        • 1 tbsp Bhath powder
        • few coriander leaves (finely chopped) 
        • 2-3 tbsp Oil
        • Salt 

        • Method-Heat oil in a pan. Fry bhindi well.Next fry potato and keep it aside.In a pan ,add oil add cumin and mustard,chana dal,urad dal ,hing, and fry till done ,add onions and fry well add tomato and sauté for some time.Next add the fried potato and bhindi, the masala pwd ,salt and mix well.Serve hot with roti or Rasam rice.

        Apple Banana Milk Shake

          cup Chiroti rava (semolina or sooji)
           cup Milk
          cup Ghee

          tbsp Raisins


          cup  Sugar 
          Few Cashew nuts/Badam 
          1 tsp  Cardamom Powder/ kesar
          1/2 cup thick mango pulp


          Method
          • Roast rava in the ghee till aromatic
          • Add sugar and warm milk and lower the flame. Add the mango pulp. Simmer and cover with lid till it blends in. 
          • Add raisins and cardamom powder to garnish.
          • Add fried cashew nuts/Badam and  kesar (opt)
          • Enjoy with little ghee on the top.

          Hurali Usli / Kulith Usal

          Hurali Usli or Horsegram Salad or Kulith Usal is  nutritious and healthy recipe which can be enjoyed by  kids as well as elders.Horsegram is a legume variety known as Kulith in Marathi.This is with onion and lemon.

          Ingredients:
          Horsegram Salad , Huruli Usli,Kulith usal
          Huruli Usli
          • 1 cup Huruli / Horsegram (steamed)
          • 1/4 cup finely chopped onion
          • Fresh coriander leaves-few 
          • 1-2 tbsp Grated Coconut, fresh
          • 1 tsp Lemon juice
          • Salt -as per taste

          Seasoning/tadka
          • Oil
          • few Curry leaves
          • 1/2 tsp Mustard seeds
          • 1/2 tsp jeera
          • 1/2 tsp chana dal
          • 1/2 tsp urad dal
          • 5-6 finely chopped  green chilies
          • Hing-pinch

          Method: Mix sprouted huruli, onion salt .Season with mustard seeds, jeera, chanadal, uraddal, curry leaves, green chilies and hing.Add lemon juice ,fresh grated coconut,coriander leaves and mix well and serve as  side dish for chapati or rasam rice.
