Masala Chapati

Masala Chapati is simple and easy lunch box recipe for kids or adults. A mix of herbs and greens to your daily diet.  Enjoy with pickle or Sabzi of your choice.


Masala Chapati,Paratha,
Masala Chapati

Ingredients



  • 1.5 cups of wheat flour 


  • Fresh corainder leaves -1 cup


  • (finely chopped)


  • Dry Pudina leaves-1-2 tsp


  • Garam masala pwd-1 tsp


  • Dhani Jeera pwd-1 tsp

  • Curds-1-2 tsp

  • Turmeric-1/2 tsp

  • Jeera-1/2 tsp

  • Ajwain-1/2 tsp


  • Salt to taste


  • 1 tsp. of ghee


  • Oil as needed



  • Method


    In a bowl combine all the ingredients with the flour, add yogurt  and knead into smooth dough, add water as req. 
    Add oil and knead it again and keep it covered for sometime. Make chapatis. 
    Heat a skillet (tava) , gently put in the chapati add oil, turn on both sides till done. 
    Serve very hot with pickle or curds.


    You can add any filling inside and make it more tastier.

    Baby Corn Palak Sabzi

    Baby Corn Spinach Sabzi is a awesome combination of healthy Spinach (Palak) and Baby Corn, deliciously flavoured with various spices. Enjoy with your favorite Indian Breads. Spinach or Palak provides healthy nutrients and is rich in iron, vitamins and minerals. It is very important for overall health including skin, hair etc. It is one of the immunity booster foods.

    Ingredients:
    1 Simla Mirch (capsicum)
    cut into big squares

    1 cup Baby corn (steamed and chopped)
    1 cup spinach (boiled)
    1 onion, chopped
    1/4 tsp ginger garlic paste
    1 tomato
    1-2 green chillies chopped

    1/2 tsp jeera
    1/2 tsp red chilli pwd
    1/4 tsp turmeric pwd
    1/2 tsp dhania jeera pwd

    1/2 garam masala
    1/2 tsp kasuri methi(Everest)
    salt to taste
    1 tbsp oil
    Roasted cashews-few

    Method- In a kadai, add little oil ,fry capsicum, baby corn and keep it aside. 
    Grind spinach with green chilies into fine paste. 
    Next in a pan, heat oil, add jeera, chopped onions, next, add ginger-garlic paste and saute for 2-3 mins. 
    Add the tomatoes, masala pwds, ground paste  and fry well. 
    Add little water and cook for 1-2 mins. 
    Next add the fried capsicum, baby corn, salt, kasuri methi and mix. 
    Simmer for 2-3 mins till the gravy blends well. 
    Serve hot with rice or hot chapatis.

    Flat Beans Potato Stir fry / ValPadi Batata Bhaji


    Flat Beans Potato Stir fry /  ValPadi Batata Bhaji is awesome combination to be enjoyed with Rasam (Tili Saaru ) rice or Indian Breads.Blended with spices and coconut it tastes delicious. Flat beans are known as Valpapdi in Maharashtra and Chaprada Avare in Bangalore.

    Flat Beans Potato Stir fry

    • Ingredients
      • 1 cup chopped Chaprada Avare (Flat beans)
      • 1 cup finely chopped potatoes
      • Bhath pwd 2-3 tsp
      • Salt-taste
      • Grated coconut 1-2 tsp (opt)

    • Seasoning
    • 1 tbsp. oil
    • 1/2 tsp. mustard 
    • 1 tsp. chana dal
    • 1 tsp. urad dal
    • 1/2 tsp  jeera
    • Hing-pinch
    • Turmeric-pinch
    • curry leaves-few

    Method:

    Heat oil in a pan. Add mustard, allow to splutter, add chana dal,urad dal, 
    hing.Fry till light brown, then add curry leaves, beans, potatoes ,
     cover with a lid and cook till 
    beans and potatoes  are done.Add bhath pwd,salt and mix well. 
    Add grated coconut and mix.Serve hot with Chapatis/Rasam Rice.

    Ingredients:

    Baby Corn Masala


    • 1 Simla Mirch (capsicum)
    • cut into big squares
    • 1 cup Baby corn (steamed and chopped)
    • 1 onion, chopped
    • 1/4 tsp ginger garlic paste
    • 1 tomato
    • 1-2 green chillies chopped
    • 1/2 tsp jeera
    • 1/2 tsp red chilli pwd
    • 1/4 tsp turmeric pwd
    • 1/2 tsp dhania jeera pwd
    • 1/2 garam masala
    • 1/2 tsp kasuri methi(Everest)
    • salt to taste
    • 1 tbsp oil
    • Roasted cashews-few

Add little water and cook for 1-2 mins. Next add the fried capsicum, baby corn, salt, kasuri methi and mix.
    Simmer for 2-3 mins till the gravy blends well.
    Serve hot with rice or rotis.

    Beetroot Paratha

    Beetroot Paratha  is an easy lunch box recipe for kids. Made from healthy finely grated Beetroot with simple wheat flour and mild spices. It is nutritious and tasty.

    Ingredients:

    • Wheat Flour            - 1 cup
    • Beetroot                  - 1cup grated
    • Jeera/Cumin Seeds         - 1/2 tsp
    • Ajwain                     -1/2 tsp
    • Curd                       - 1-2  tbsp
    • Turmeric powder    - 1/4 tsp
    • Dhania Jeera pwd  -1/4 tsp
    • Garam Masala         - 1 tsp
    • Chilli Powder          - 1/2 tsp
    • Salt                          for taste
    • Oil                           as req

    Beetroot Raita


    Beetroot Raita is simple and easy. A delicious healthy combination for rotis or masala rice. Enjoy Beetroot either as salad, sabzi or raita. Red, juicy Beetroot blended with chilled yogurt and mild spices makes it a refreshing dish.

    Beetroot Raita

    Ingredients
    • 1 cup plain curds/yogurt
    • 1 beetroot (shredded)
    • 1/4 tsp jeera pwd
    • 1/4 tsp Peanut Pwd
    • Few curry leaves
    Seasoning
    • 1/2 tsp mustard
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 1/2 tsp jeera
    • oil (seasoning)
    • 2-3 green chili (finely chopped) 
    • Hing a pinch
      Method -Take a bowl, add curds,salt, peanut powder and cumin powder. Next add shredded beetroot and stir.Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies, chana dal, urad dal, curry leaves and hing. Fry for some time. Pour the seasoning over the yogurt. Mix well. Serve the raita with Chapati or Pulao.

    Note-The colour of raita will turn pink.

    Nucchina Unde / Steamed Lentils Dumplings 


    Ingredients:

    • Chana dal-1/2 cup (Kadle bele)
    • Tur dal-1/2 cup (Togari bele)
    • Moong dal-1/2 cup (hesaru Bele)
    • (washed and soaked for 2-3 hours)
    • Green chillies-8-10
    • Jeera-2 tsp
    • Coconut-2-4 tbsp
    • Hing-pinch
    • Onion-1,finely chopped
    • Fresh coriander-finely chopped
    • Salt to taste
    Method:  

    Grind the soaked dals together with chillies, jeera, coconut and hing coarsely.
    Next add chopped onion, coriander and salt and mix the mixture well. 
    Put them in the idli plates and place them in the cooker and steam for 10-15 minutes. 
    Scoop it out from the idli tray, cut it in desired shape and serve hot with ghee and chutney of your choice.
