Corn Masaledar

Corn Masaledar is very simple and easy to prepare. Delicious, tangy and spicy to taste. Enjoy as side dish with chapati. Kids will love this.

Corn Masaledar

Ingredients
  • Sweet corn steamed-1 cup
  • Tomatoes  2 finely chopped
  • Onion        1 finely sliced
  • Capsicum-1 finely chopped
  • Sugar     1/4 tsp (opt)
  • Bhath Pwd-2-3 tbsp
  • Dhania Jeera pwd-1 tsp
  • Salt-for taste

Seasoning
  • Oil                1-  2 tsp
  • Green Chillies  1-2 chopped
  • Mustard                1/4  tsp 
  • Jeera        1/4 tsp
  • Turmeric-pinch
  • Hing-pinch


Method: In a kadai,heat oil, prepare the seasoning, add mustard, hing, jeera, once they splutter green chillies, saute for 1-2 mins. Next add onion and fry well, add capsicum and fry next add tomatoes and stir till the tomatoes become soft. Add steamed corn, salt, masala pwd, sugar and mix well. Serve hot with chapatis.

Green Pigeon Peas Curry / Togarikalu Curry

Togarikalu Curry

Green Pigeon Peas is a healthy nutritious side dish for chapati or rice. 

Togarikalu (in Kannada ) or  Tuvar Lilva is a bean variety  mostly available during winter season in India.This curry is tomato onion based.


Ingredients
  • Togarikalu– 1 cup
  • (cooked )
  • Tomatoes-1 cup (chopped)
  • Onion-1 cup (chopped)
  • Ginger garlic paste-1/2 tsp
  • Dhania Jeera pwd-1/2 tsp
  • Sambar Pwd-2 tsp 
  • Oil-1-2 tsp
  • Salt-for taste
  • Cumin seeds -1/2 tsp
  • Coriander leaves-few

Method-

In a pan,heat oil in a pan, add cumin seeds add onions and sauté well.
Next add ginger garlic paste,chillies and fry for 1-2 mins.
Next add chopped tomatoes,and fry till mushy.
Next add the masala pwds and fry. 
Add the cooked togarikalu and mix.
Add  about 1/2 cup water and stir well.
Simmer on low heat for 10-15 mins till the gravy blends well.
Serve hot with peas pulao or chapati.

Sweet Corn Salad

Sweet Corn Salad recipe is simple and easy to prepare.Very Healthy and nutritious and colorful kids will love it.The Pomogranate seeds in the salad gives a delicious flavor.Enjoy!!If you are planning to prepare during weekends, or as evening snack get the kids involved.



Ingredients:

1/2 cup  sweet corn (steamed)
Sweet Corn Salad 
1/2 cup pomogranate seeds
1 tbsp. grated, coconut (opt)
1 tsp. lemon juice
1 tbsp. chopped, coriander
5-6 finely finely chopped green chillies
1 tsp. oil
1/4 tsp. mustard seeds
1/4 tsp urad dal
1/4 tsp chana dal
Hing-pinch
Salt to taste

Method:
Combine Corn,pomogrante seeds, lemon juice and salt in a medium sized bowl.
Mix well and set aside. Heat oil in a pan, add the mustard seeds,chana dal,urad dal,curry leaves and hing once done add chopped chillies and fry a few seconds. Add this seasoning to the salad.Garnish with coconut, coriander leaves and serve. 


Note-  Reduce spice for kids.

Ragi Khara Dosa

Ragi Khara Dosa (Ragi : finger millet ) is healthy , nutritious and filling breakfast.This is a spicy version.Easy to make and enjoyed hot.A mix of fingermillet flour and semolina with spice and coconut to give the perfect crispy crepes.


Ragi Khara Dosa,finger millet semolina crepes
Ragi Khara Dosa
Ingredients:

1/2 cup Rava Chiroti
1 cup finger millet(ragi flour)
Salt as per taste
Oil
Jeera-1 tsp

To Grind
Coconut-1/4 cup
Red chillies-8-9
Tamarind juice - 1 tbsp
Hing: Pinch
Menthya seeds-few



Method:

Mix rava and ragi flour and salt .The consistency of batter should be like normal dosa batter. Keep overnight or atleast for 5-6 hours . Next day grind in mixer the items mentioned in grinding. Add to the dosa batter.Add salt,jeera .Mix well. Make dosas. Serve hot with butter and chutney of your choice.

Menthya Hittu Gojju

Menthya Hittu Gojju is an easy side dish for rice, if you are bored with normal sambhar or Rasam. Try this tangy and spicy gojju.



Ingredients:

  • 1-1/2 tbsp. Menthya Hittu pwd
  • 2 tsp. tamarind juice
  • 1/2 tbsp gur / jaggery
  • Salt to taste
  • Water

  • For Seasoning:
    • 1 tbsp. oil
    • 1/2 tsp. mustard seeds
    • Hing-pinch
    • Curry leaves-few
    • Red chili-1

Method: In a bowl, combine all the items 
mentioned in ingredients with 1 cup of water 
and mix well.
Heat the oil in a pan, prepare seasonings , 

once done add to  the gojju mix and mix well.
Serve Menthya Hittu Gojju with chapati/rice.

Peanut Chaat / Masala Kadlekayi

Peanut Chaat / Masala Kadlekayi Chaat is quick and easy chaat recipe. Made with Congress Kadlekayi, a very famous snack found in bakeries in Bangalore. This one is healthier version with dash of lime, onions and cucumber making it more tasty.

Enjoy with hot cup of tea/coffee or enjoy while reading a book or watching your favourite movie.

Prep Time: 15 mins

Ingredients:



Peanut Chaat / Masala Kadlekayi

  • 1 cup congress Kadlekayi
  • 1 onion chopped
  • 1/2 cup cucumber
  • Few coriander leaves (garnish)
  • Lime juice -1/2 tsp
  • Salt-for taste


    Method In a bowl, add the above ingredients - congress kadlekayi, chopped cucumbers, onions, salt and mix. 


    Top it up with coriander leaves and lemon juice and mix and serve with hot cup of tea or coffee .




    (You can add  shredded raw mango /sev and make it more tangy )

    HesaruKaalu Usli / Moong Usal / Sundal

    HesaruKaalu Usli / Moong Usal is  nutritious and healthy recipe which can be enjoyed by  kids as well as elders, enjoy with chilled curds. Moong beans are green in color and loaded with nutrients.

    Moong Beans have to be soaked for 1-2 hours since it reduces the cooking time. You can pressure cook for 10 mins. Do not overcook as it will be all mashed up.

    Ingredients:
    HesaruKaalu Usli / Moong Usal /Sundal
    Hesarukaalu Usli
    • 1 cup Sprouted Moong/Hesaru kaalu
    • Fresh coriander leaves-few 
    • 1-2 tbsp Grated Coconut, fresh
    • Salt -as per taste

    Seasoning/tadka
    • Oil
    • few Curry leaves
    • 1/2 tsp Mustard seeds
    • 1/2 tsp jeera
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 5-6 finely chopped  green chilies
    • Hing-pinch
    • Turmeric-pinch

    Method: Mix sprouted moong, salt. Season with mustard seeds, jeera, chanadal, uraddal, curry leaves, green chilies and hing. Add fresh grated coconut,coriander leaves and mix well and serve with chilled curds.

    Kulith / Hurali Usli / Sundal

    Hurali Usli or ಹುರಳಿ Horsegram Salad or Kulith Usal is  nutritious and healthy recipe which can be enjoyed by  kids as well as elders. Horsegram is a legume variety known as Kulith in Marathi.

    Ingredients:

    • 1 cup Huruli / Horsegram (boiled)

    • 1-2 tbsp Grated Coconut, fresh
    • Salt -as per taste

    Seasoning/tadka

    • 1/2 tsp urad dal
    • 5-6 finely chopped  green chilies

    Stuffed Bhindi

    Stuffed Bhindi or Bharwan Bhindi is delicious side dish for Indian breads. The spices stuffed in the Lady's finger or Okra and fried is yummy, tangy and tasty. Enjoy!!  


    Ingredients:

    Stuffed Bhindi

                       Stuffed Bhindi 

    • Lady'sfinger /Bhindi-25-30
    • 2-3 tbsp oil


    Stuffing masala

    • 1 tsp amchur pwd
    • 1 tbsp dhania-jeera pwd
    • 1 tsp Chili pwd
    • 1-2  tbsp Veg Bhath pwd
    • Turmeric-pinch
    • salt 
    • Tamarind paste-1-tsp


    Method-  Mix all the masala mentioned under stuffing ingredients and keep it aside. Next carefully trim the sides and slit the bhindi vertically. 
    Fill in the masala in the bhindi.
    Heat oil in a kadai.Place the stuffed bhindi and fry on low heat till done.
    Serve Stuffed Bhindi hot with Indian Breads.

    Simla Mirch Bhajia (Capsicum Fritters) is a  spicy starter/snack that can enjoyed by all of us.

    Ingredients

    • 1  Large Capsicum cut finely
    • 1-2  tsp red chilli pwd /Bhath pwd
    • 1/2 tsp tumeric pwd
    • 1 tsp Dhania Jeera Pwd
    • 1 tsp of dry mango powder 
    • (Everest Amchur)(opt)
    • 1/4 tsp  garam masala 
    • 1/4 tsp ajwain
    • 3 tbsp gram flour (besan)
    • 1 tbsp rice flour
    • salt for taste
    • Oil for frying


    Method-

    Take a bowl combine all the ingredients and mix well. 
    Add little water, add cut capsicum and mix well ,the flour and capsicum should blend and be well coated and be dry. 
    Heat a little oil and add it to this batter and mix it well.
    Keep it for sometime.
    In a kadai heat sufficient oil for frying. 
    Slowly add the capsicum besan mix in batches in the hot oil. 
    Fry till golden brown on both sides. 
    Drain on absorbent paper. 

    Serve hot spicy, crispy fried Simla Mirch Bhajias with ketchup or chutney of your choice.

    You can enjoy these with simple Rasam Rice too!.. Anyway you like it, you will surely enjoy the taste.

    Bread Dosa

    Bread Dosa is an easy instant dosa for morning breakfast, healthy mix of semolina with bread and spices. Enjoy hot with chutney or pickle.


    Ingredients:

    • 1/2 cup Chiroti rava (fine rava)
    • 4 slices bread 
    • (cut into small pieces and sides discarded)
    • 1-2 tsp jeera
    • Curds-1/4 cup
    • salt to taste
    • Corainder leaves-few chopped
    • Green chillies-5-6 finely chopped
    • water
    • Onion-1 finely chopped


    Method:

    In a bowl, mix rava, curds and bread pieces salt and keep it aside for 20 mins. 
    Next add all the other ingredients-jeera, chillies, onion, coriander leaves  
    and water and mix to form the dosa batter. 
    Heat the tava/skillet and make the dosas, add oil to make it crisp by carefully 
    turn both sides till golden brown. 

    Serve Bread Dosa hot with chutney /pickle or enjoy it JLT!

    Sweet Dosa / Sihi Dose

    Sweet dosa is  a special dosa prepared during Saraswati Pooja during Dasara festival in Karnataka. A blend of jaggery, cardamom in dosa batter, a perfect and easy desert recipe. Kids will enjoy it.

    1. Ingredients
    Rice - 1 cup
    Poha/avalakki - handful
    Grated coconut - 1/4 cup
    Grated Jaggery - 1/2 cup
    Elachi pwd - 1-2 tsp


    Method:  Soak rice,  poha and methi seeds for few hours. Next grind them in a mixer. Once done, add coconut, jaggery  elachi pwd and grind again so the batter blends well. Keep it for some time. Make dosas. Serve hot with ghee.

    Kadabu / Karanji

    Kadabu in kannada or Karanji in Marathi is a favorite sweet made during Ganesha Festival. Try this delicious jaggery stuffing kadabu as part of your Diwali Dessert platter. Enjoy !! You can make this deep fried Coconut Sweet Dumpling with sugar instead of jaggery.

    Ingredients:

    Kadabu / Karanji 

    For the dough:

    • 1/2 cup Chiroti Rava 
    • 1/2  cup Maida
    • 1-2 tbsp Ghee
    • Salt-pinch
    • Oil for Deep Frying
    • Water 
    For the Filling:
    • 1 cup freshly grated coconut
    • 1 cup  jaggery powdered
    • 1-2 tsp Elachi pwd
    • 1-2 tsp khus khus
    • Ghee
    Method: Mix all the ingredients for the dough ,add required water and  knead well and keep it aside .Next prepare the filling.Heat ghee and add coconut and jaggery. Cook on medium heat with stirring, until the jaggery has melted and mixed well with the coconut. Add poppy seeds, cardamom powder  and mix well. Let it cool. Next make small pooris with the dough. Fill in with the jaggery mix and seal the ends properly. Heat oil in a big kadai, carefully place these in the oil and deep fry till golden brown on both sides. Strain on absorbent paper. Enjoy.

    Gorikayi Masale Bhath / ClusterBeans Masala Rice

    Gorikayi Bhath / ClusterBeans Masala Rice is spicy rice variety .An easy one pot meal made with gavar/cluster beans blended with kabuli chana and homemade bhath masala powder.Nutritious and healthy.

    Ingredients: 

    Cluster Beans One pot meal
    Gorikayi Masala Bhath
    • 1 cup Cooked Rice 
    • 1/2 cup chopped gorikayi (gavar/clusterbeans)
    • 1/4 cup boiled kabuli chana / kabulkadle kaalu
    • salt as per taste
    • Grated coconut-2 tsp


    Seasoning


    • 2 tbsp Oil
    • 1 tsp Mustard(sasive)
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 2-3 tbsp Bhath Masala pwd
    • 5-6 Curry leaves
    • Turmeric pwd-pinch
    • Hing-pinch




    Method: Allow the rice to cool,spread it on a plate.Heat oil in a kadai. Add mustard seeds,turmeric, curry leaves ,hing,chana dal,urad dal.Once done add chopped gorikayi to the above seasoning. Saute frequently till done.Next add salt, boiled kabuli chana and masala powder. Mix well.Add the cooked rice .Mix well.Cover and cook on low heat.Granish with grated coconut.Serve hot.




    (you can add MTR Vangi Bhath pwd also)

    Simple Chitranna

    Simple Chitranna is a easy seasoned rice variety.  Kids will definitely love it. Enjoy this one pot meal with crisps (Sandige/Papad) .


    Ingredients:

    • 1 cup rice (cooked)
    • 1/4 cup fresh coconut(grated)
    • salt to taste

    Seasoning

    • 1/2 tsp mustard seeds
    • 1/2  tsp cumin seeds
    • 1 tsp channa dal
    • 1 tsp urad dal
    • 6-7 cashew nuts
    • 2 tbsp peanuts
    • Hing pinch
    • Sarin pudi-1-2 tsp
    • Red chilly-1 (opt)
    • few Curry leaves
    • Few coriander leaves
    • Oil-2 tbsp


    Method:  Allow the rice to cool ,spread it on a plate. Next heat oil in kadai,roast cashews and peanuts and keep it aside, next add the other items in seasoning ,roast well, add sarin pudi  and fry ,  add the rice to this seasoning. Add the grated coconut, salt, cashews and peanuts and mix well. Saute for 1-2 mins. Garnish with coriander leaves. Serve hot with Sandige.

    Corn Avalakki


    Corn Poha or Avalakki is spicy and quick breakfast recipe.Poha (Oggarane Avalakki ) is easy to cook, adding vegetables to it makes it more nutritious and tasty.This one is with sweet corn .The kids will definately love it.

             Corn Poha / Corn Avalakki

    Ingredients:
    1 cup poha ((flaked rice /avalakki)
    1 cup steamed corn
    5-6 green chillies, finely chopped
    Salt to taste
    For Seasoning:
    2 tbsp. oil
    1/2 tsp. mustard
    1/2 tsp.cumin seeds
    1 tsp chana dal
    1 tsp. Urad dal
    2 tsp. peanuts (opt)
    Hing- a pinch
    Curry leaves-few
    Turmeric pwd-pinch

    For Garnishing
    2 tbsp. grated coconut
    Few coriander leaves


    Method: Soak the poha in water for 5-10min. Wash  and drain the water completely.
    Heat the oil in the pan, fry the peanuts and keep it aside .
    Next add seasonings and fry till done.
    Add green chillies and corn and stir fry.
    Once done add the poha and mix well.
    Add salt, coconut ,peanuts and coriander leaves to the poha.
    Mix well  and serve hot.

    Seemebadnekai Palya(Chow Chow Sabzi) ಸೀಮೆ ಬದನೇಕಾಯಿ ಪಲ್ಯ is the simple sabzi blended in South Indian style seasoning , with the flavor of coconut and spices , it tastes yummy.Enjoy (Chow Chow is known as Chayote in English)


    Ingredients:
    1  cup Seemebadnekai Chopped
    3-4 Tbsp shredded Coconut
    1-2 tsp Bhath pwd
    Salt to taste

    Seasoning 

    1/2 tsp mustard
    1/2 tsp jeera
    1/2 tsp chana dal
    1/2 tsp urad dal
    1 Tbsp Oil
    Turmeric-pinch
    Hing-pinch
    Curry leaves-few

    Method: Heat oil in a pan. Add the items in seasoning ,once done,add the chopped vegetables and fry for few mins Add salt. Cover and cook on low flame.Once done, add bhath pwd , add grated coconut . Mix well.Serve hot with rasam rice or chapati.

    Vegetable Bonda

    Vegetable Bonda is a favorite snack  in South India. A best bet on a rainy day or a nice evening snack with a hot cup of tea with spicy coconut chutney or sauce.


    Ingredients
    Vegetable Bonda


    • 1cup gram flour (besan)
    • 2 tbsp Rice flour
    • Salt to taste
    • 1 tsp bhath pwd
    • 1 tsp Rasam pwd
    • 1 tsp hot oil
    • Water
    • Vegetable Mix

    • 1 Potato (boiled and mashed)
    • 1 cup -mix vegetable (beans,peas,carrots)
    • 4-5 Green Chilies (chopped)
    • Coriander leaves -few
    • Curry leaves-few
    • Mustard-1/2 tsp
    • Jeera -1/2 tsp
    • Chana dal-1/2 tsp
    • Urad dal-1/2 tsp
    • Hing-pinch
    • Turmeric pwd-pinch
    • lemon juice-1 tsp
    • Oil for frying


    • Method -In a kadai, make the seasoning with mustard, jeera , chana dal, urad dal, curry leaves, hing, green chillies. Once done add the vegetables, stir fry till done next add the boiled potatoes ,salt and mix well. Make small balls of this mixture. Next in a bowl, add gram flour, rice flour, turmeric powder, little salt, masala pwds, hot oil. Add little water and  make a batter for the vadas. Dip each ball in the batter and deep fry till golden brown. Serve hot with chutney or ketchup.
