Vegetable Salad/Kachumber


Vegetable Salad or Kachumber Salad or Kosambri is a healthy and nutritious combination of various raw vegetables blended into salad that can be prepared very easily.


Ingredients:

  • 1/2 cucumber finely chopped 
  • 1 Onion Finely chopped
  • 1 tomato finely chopped
  • 1 capsicum finely chopped
  • 1 tsp lime juice
  • Salt
  • 1/4 tsp Pepper pwd
  • Grated Raw mango
  • 1/4 tsp chilli powder
  • 1/4 tsp chaat masala


  • MethodMix all the above ingredients in a bowl and serve. Garnish with coriander leaves and lemon juice.

Majjige Huli / Khadi

Majjige Huli or Khadi is gravy made from Yogurt / buttermilk with grounded masalas. Enjoy it hot. Majjige Huli is kannada word for Khadi. This version is made from Cucumber.

Majjige Huli/Khadi
Ingredients
Cucumber -1
Beaten curds /butter milk 1 cup
Salt

Grinding
Coconut 3 tbsp
Jeera 1 tsp
Green chillies 6-8
Coriander a handful
Ginger-few shreds
Channa Dal 1 tsp 
(soaked for about 3-4 hours)

Seasoning
Mustard seeds 1/2 tsp
Oil 1 tbsp
Hing a pinch
Curry leaves 7-8
Menthya -few seeds
Turmeric a pinch


Method:  Cook  till cucumber is tender  add little salt while cooking. Grind all the ingredients into a fine paste. Add grounded paste , cooked vegetable and water and keep it to boil, stirring on low heat. Beat curds and pour it into the this mixture while stirring.  Add salt and boil.
Season with Oggarane / tempering.  Turn off the heat.

Enjoy Majjige Huli or Khadi hot with rice and uppuhachida Mensinkayi.(dried masala chilies/Curd Chilies/Balakada Mensinkayi)
( You can use Ash Gourd, Seemebadnekayi also to make khadi. You can also add besan i/o of grounded paste)

Kadlekayi chutney(peanut chutney) a superb combination with IDLI,dosa or chapati.Enjoy this gluten free vegan groundnut chutney ,the recipe is simple and easy.

Ingredients:
Peanuts - 3/4 cup
Grated coconut - little (optional)
Red chillies - 6-8
Tamarind - little
Salt as required

Seasoning
Mustard seeds-1 tsp
Chana dal-1/2 tsp
Urad Dal-1/2 tsp
Curry leaves-few
Hing-a pinch



Method:
Roast the peanuts ,red chillies in little oil.Grind peanuts, red chillies, tamarind and salt with little water first.Then add more water and grind it to a slightly smooth paste.

Season with mustard seeds,chanadal ,urad dal,hing,curry leaves.Enjoy

Buttermilk/Majjige


Chilled Buttermilk  (Chaas) or simple Majjige (kannada) is enjoyed across homes especially during summers.

Ingredients:

  • 3-4 tbsp yogurt/curds
  • 1/2 cup water
  • 1/2 tsp cumin seed powder(opt)
  • Salt as per taste
  • 1/2 tsp Chaat masala

Method: Add the above in mixer/juicer and blend well.Serve chilled with ice cubes.
(You can also try the more spicy version by adding chopped green chilies,mint, coriander leaves, grated ginger)

Lemon Rice / Chitranna

Lemon rice / Chitranna / Phodni cha Bhaat is very simple and easy lemon flavored rice almost made is every house.Enjoy !

Ingredients

1 cup cooked Rice
1 onion (optional)
Grated coconut
Seasoning
Oil 2-3 tsp
Mustard 3/4 tsp
urad dal 1 tsp
Chana dal 1 tsp
Green chillies-4-5(finely chopped)
Hing  a pinch
Turmeric-a pinch
Curry leaves -few
Salt to taste
Peanuts-few

Method
Cook Rice.Spread on a plate.Heat oil in a pan fry peanuts till brown take them out in a plate,next add mustard seeds, allow to splutter. Add turmeric powder and other seasoning items, fry for 2 minutes. add onion ,fry till golden brown.Next add the cooked rice , squeeze lemon juice and mix well. Add grated coconut and garnish with coriander leaves .Serve hot.

Mosaru Avalakki / Curd Poha / Dahi Poha

Mosaru Avalakki ( Dahi Poha ) is made by mixing Poha (flaked rice) with spicy and seasoned yoghurt and is very delicious. Mosaru means curds in Kannada This dish is normally made during Krishna Janamashtmi festival in South India.



Ingredients:

  • 1 cup poha (flaked rice /avalakki) 
  • 1 cup curds
  • 1 tbsp. grated fresh coconut
  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. chana dal
  • 1/2 tsp. urad dal
  •  Hing-pinch
  • 3-4 green chilies, chopped
  • Few-peanuts
  • 1 tbsp. chopped coriander leaves
  • Few- curry leaves
  • Salt to taste


Method:
Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely.
Add curds, and salt to the poha. Keep aside. Heat oil in a pan, add mustard seeds, after it splutters, add chana dal,urad dal,hing and stir fry.Add fried peanuts(opt).
Add green chillies, curry leaves fry it for a while. 
Add this seasoning to poha mixture and mix well.
Add coconut, coriander leaves.Mix and Serve.

Ingredients:


  • 2 Potatoes boiled and grated
  • 1/4 cup steamed peas
  • 9-10 Bread Slices 
  • Finely chopped Coriander leaves 
  • Finely chopped Green chilies
  • 1/2 tsp Red chili pwd
  • 1/4th tsp Garam Masala pwd
  • 1/4 tsp jeera
  • Salt for taste
  • Oil for frying

  • Method: Add salt, chili powder, gram masala, green chilies and coriander leaves to the mashed potatoes, peas, jeera mix well. Take some water in a bowl and dip a bread slice for few seconds. Squeeze the water from the bread by pressing between palms gently. Place  potato mix over the damp bread and roll and seal the edges of the bread covering it completely.
  • You can make it any shape. Keep it in aside for some time to set. Heat oil in a kadhai slowly add the roll in the oil and deep fry on medium flame till golden brown. Remove and place it over absorbent tissue. Serve bread rolls hot with green chutney and tomato sauce.

Ragi Buttermilk

Ragi Buttermilk / Raagi Majjige (fingermillet flour with Buttermilk ) is best to beat the scorching summer heat.Healthy ,cooling and nutritious drink.A perfect thirst quencher.

Ingredients
  • 2 tbsp ragi (roasted)
  • 1 cup water
  • ½ cup buttermilk
  • Salt as per taste

Method
Mix ragi flour in little water to form a smooth paste.Blend Ragi paste ,salt ,buttermilk and water in blender.Serve cold.

Chocolate Milk Shake a treat during summers for kids .Enjoy
Ingredients
  • 3 tbsp (Hershey's)Chocolate Syrup
  • or (cocoa powder)
  • 3 tbsp Chocolate shreds
  • 3 cups Milk
  • Sugar as per taste
  • 1 scoop Ice cream

Method: Add chocolate syrup,sugar,milk to blender and blend well.Add little ice cream and blend again.Serve chilled in long glasses with scoop of icecream and chocolate shreds on top.

Gajar Halwa/Carrot Halwa

Carrot Halwa or Gajar Halwa, all time favored Indian dessert recipe made from fresh carrots slowly cooked in rich milk with sugar and garnished with dry fruits. It is a perfect and easy dessert which is nutritious and healthy as well.

You can enjoy this Carrot Halwa warm and delicious way or  you can add chilled ice cream and double the joy!


Ingredients

  • 4-5 Carrots 
  • 2 cups Milk 
  • 1 teaspoon Cardamom pwd/ Elachi
  • 3 tbsp Ghee 
  •  Dry fruits-Raisins, almonds, pista
  • 2-3 cups Sugar


Method
  • Wash and grate the carrots.
  • Fry the carrots in little ghee for 2-3 mins. Add the milk. Cook on a low flame some time stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed. Add slightly crushed cardamoms and the raisins. Mix well.
  • Remove the gajar halwa from heat and arrange in a serving dish. Garnish with grated almonds and pistachios. Serve cold or hot.

Spicy Shankarpali / Crunchy Crisps

Enjoy spicy Shankarpali/crunchy crisps with a nice cup of hot tea during kids vacations or festivals.

Ingredients
Spicy Shankarpali
  • 1 cup maida
  • 1 tbsp Rice flour
  • 1 tbsp chiroti rava
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp jeera dhania pwd
  • 1/2 tsp Ajwain
  • 1/2 tsp sesame seeds
  • 1 tsp Jeera/cumin
  • 1 tbsp hot oil
  • Water
  • salt to taste
  • oil for deep frying

  • Method: 
  • Mix the flour with turmeric, chili powder, salt, Jeera, ajwain with 1 Tbsp hot oil, mix well and keep it aside covered for few hours.
  • Make a chapati shape with the dough as thin as possible.
  • Cut into diamonds or squares using the cutter or knife.
  • Heat oil in a heavy bottom pan, Fry till golden brown and crisp. Store in an air-tight container.

Aloo Paratha

Aloo Paratha - a good healthy kickstart for your busy life. Hot parathas stuffed with spicy aloo masala. Enjoy hot and spicy.

Ingredients


  • 1 cup  wheat flour
  • 1/2 tsp  cumin seeds/carom seeds
  • 1 /2 tsp turmeric 
  • 1 -2 tsp chilli powder/garam masala
  • 1/2 tsp jeera dhania powder
  • 1/2 red chili pwd
  • 1 1/2 cup grated boiled potato
  • 1 tsp lemon juice
  • Few-coriander leaves
  • 2 tbsp oil
  • salt to taste
Method


1.Knead the flour with water, a little salt,oil into a soft dough.Cover it for 4-5 hours.
2 In a bowl, add the mashed potatoes, salt, masala powder, coriander leaves, lemon juice  and mix well. Divide the mixture into balls. 
3.Make a small chapati with the dough,keep this ball in the middle and bring all the sides together, once done flatten them with your fingers, or use the rolling pin and make the paratha 
4.Heat a skillet (tava) gently, put in the paratha, turn on both sides till done. Now add oil or ghee all around the edges, fry both sides, carefully turning over until evenly brown. 
Serve Aloo Paratha hot with pickle or curds.

You can add mint leaves/ginger paste for extra flavor.

Palak Pakoda /Spinach Pakora

Spinach Pakora or Palak Pakoda is yummy and tasty. Pakora is a favorite Indian starter/appetizer. Enjoy this healthy spinach version with hot cup of tea.

Spinach Pakora

  • 1 fresh Palak(spinach)-finely chopped
  • 1 cup Gram Flour(Besan)
  • 1 tbsp Rice flour
  • 1 Onion(chopped)
  • 3-4 Green Chilly
  • 1-2 tsp Red Chilly Pwd
  • Salt to taste
  • 1 tsp cumin seeds
  • few-coriander leaves
  • Water
  • Oil for frying



Method 
Mix all the ingredients with little water to form the  dough. Add 1 tsp heated oil to the dough and mix well. Heat oil, make pakora. Fry it till turns golden brown.
Drain the oil and serve Palak Pakoda hot with ketchup or chutney of your choice.

Ragi Dosa

Ragi Dosa (Ragi : finger millet ) is healthy , nutritious and filling breakfast.Easy to make and enjoyed hot..The onion and chilies adds the zing.

Ingredients:

1/2 cup Rava Chiroti

1 cup finger millet(ragi flour)

Salt as per taste

Oil

1 finely chopped onion

Few Coriander Leaves

Green chillies-7-8

Jeera-1 tsp

Method:

Mix rava and ragi flour and salt (add little curds) .The consistency of batter should be like normal dosa batter. Keep overnight or atleast for 5-6 hours .Next day, mix in vegetables,chillies, jeera, coriander leaves. Make dosas. Serve hot with butter and chutney of your choice.
