Green Beans Sabzi version II / Hurlikayi Palya version II

Green Beans Sabzi / Hurlikayi palya (french beans stir fry) can be made in various ways.Adding coconut to it increases its taste.Enjoy this variety.


Ingredients:

Green Beans Sabzi version II / Hurlikayi Palya version II,french beans stir fry
Hurlikayi Palya
  • Green beans (Hurlikayi)-11/2 cup
  • (finely chopped)
  • Green chillies-5-6
  • Coconut-3-4 tbsp
  • Coriander leaves-few
  • Salt for taste
  • Sugar-pinch(opt)
  • For Seasoning : 
  • Mustard-1/2 tsp
  • Jeera-1/2 tsp
  • Hing-pinch
  • Chana dal-1/2 tsp
  • urad dal-1/2 tsp
  • Curry leaves-few
  • Turmeric-pinch


Method: Grind coconut,chillies,coriander leaves in a blender,set it aside.Heat oil in a pan,add the items in seasoning ,once done ,add the beans and fry for 2-3 mins.Cover and cook on low heat,keep stirring in between.Once the beans are done,add the ground mix ,salt,sugar and mix well and fry for 2-3 mins.Serve hot with chapati or rasam rice.

Lemon Sevai Upma / Vermicelli Upma

Lemon Sevai Upma / Vermicelli Upma is a quick and easy South Indian Breakfast recipe. The lemon flavor makes the Sevai tasty and delicious.


Ingredients

  • 2 cups vermicelli
  • 1 cup peas
  • 1 onion chopped 
  •  6-7 green chillies finely chopped
  •  curry leaves-few
  •  1 tbsp oil
  •  ½ tsp mustard
  •  1 tsp urad dal
  •  1 tsp channa dal
  •  1/2 tsp jeera
  •  Salt -for taste
  •  peanuts-few
  •  Water-as per inst
  • 3 tbsp grated coconut
  •  Hing-pinch
  •  Turmeric-pinch
  • Lemon juice-1 tbsp


Method: Add little oil in a pan, roast the vermicelli well and keep it aside. Next add oil , fry the peanuts and keep it aside. Next add mustard seeds, followed by urad dal, channa dal ,and jeera, hing, green chillies, curry leaves, turmeric and sauté well. Now, add onion fry well. Add salt, fried peanuts and reduce the flame. Add the vermicelli and add boiled water. Cook till the water evaporates. Add the lemon juice .Mix well. Garnish with coconut and coriander leaves. Serve hot.

Corn Capsicum Gravy

Corn Capsicum Masala Gravy is a great combination of sweet corn and capsicum blended with spices. A tasty gravy for Indian Breads.


Ingredients:

1 cup Sweet corn(steamed)

1 Simla Mirch (capsicum)
1 onion, finely chopped
1/4 tsp ginger garlic paste
1 tomato finely chopped
1-2 green chillies chopped

1/2 tsp jeera
1/2 tsp red chilli pwd
Turmeric pwd-pinch
1/2 tsp dhania jeera pwd
1 tsp Garam masala 
1/2 tsp kasuri methi(Everest)
salt to taste
1 tbsp oil/butter
Curry leaves-few
Coriander leaves-few

Roasted Cashew-few


Method-In a kadai, add little oil, fry capsicum and keep it aside. 
Next in a pan, heat oil, add jeera, chopped onions, green chillies and curry leaves and fry, next add ginger-garlic paste and saute for 2-3 mins. 
Add the chopped tomatoes and masala pwds and fry well. 
Add little water and cook for 1-2 mins. Next add the fried capsicum, sweet corn, salt, kasuri methi ,cashews and mix. 
Simmer for 2-3 mins till the gravy blends well stirring occasionally. 
Garnish with coriander leaves.
Serve hot with rice or rotis.

Capsicum Bhath / Capsicum Rice is easy and perfect one pot meal.Stir fried capsicum blended with bhath powder in rice tastes delicious.Enjoy with raita /papad.

Ingredients:
1 cup rice
1 cup stir fried capsicum (Simla Mirch)
1/2 tsp. mustard
1/2 tsp.chana dal
1/2 tsp. urad dal
Hing-Pinch
Curry leaves-few
Turmeric pwd-pinch
2 tbsp. oil
Salt to taste
2 tbsp. Bhath Powder
Dry grated coconut-1 tbsp
Peanuts-few

Method: In a pan add little oil and stir fry capsicum and keep it aside.Cook rice and Spread it on a plate.
Heat oil , add mustard seeds, after it splutters ,add chana dal,urad dal,hing,curry leaves, turmeric and fry until golden brown. Also fry peanuts.Add the capsicum, bhath powder, salt and mix well.Add rice, and mix well.Garnish with coconut.Serve hot with raita or papad or enjoy just like that.

Upma Cutlet

Upma Cutlet is an add-on snack made from the simple upma. Enjoy it hot. Kids will love it too.

Rava Cutlet / Sooji Cutlet can be made easily with leftover upma. 

Ingredients


  • 1 cup Veg Upma
  • 1 tbsp chilli powder
  • 1/2 tsp garam masala
  • 1/2 tsp pepper pwd
  • 1/2 tsp red chilli sauce
  • salt to taste
  • oil for frying
  • 1 cup bread crumbs
  • 1 cup corn flour or maida
  • Water



Method: In a bowl, add the upma, add the masala  pwds, salt, mix well and shape them into small cutlets. Roll it over bread crumbs. Heat oil in a pan and fry the cutlet keep flipping it over until it turns brown and crisp. Serve hot with chutney or sauce/ketchup.


(you can add few cut bread pieces (soak the bread in water,squeeze the water out and add to the upma mix in case you are unable to  bind the mixture )

Peas Upma is simple and easy to prepare.Upma with green peas makes it tasty and delicious.A perfect, filling,healthy breakfast Sooji Rava upma recipe. Upma or  Uppittu in kannada is must in every homes.


Ingredients:

  • Rava or sooji- 1cup
  • Water - 2 cups
  • Green chillies-6-7 finely chopped
  • Curry leaves-few
  • Ginger-1/2inch(crushed) (opt)
  • Peas -1cup (steamed)
  • Oil-2tbsp
  • Mustard -1/2 tsp
  • Hing- pinch
  • Turmeric-pinch
  • Jeera-1/2 tsp
  • Channa dal-1tsp
  • Urad dal-1tsp
  • Lemon juice-1tbsp
  • Salt to taste
  • Freshly grated coconut-1/2 cup
  • Coriander leaves-few

Method: Fry the rava until slightly brown and aromatic and keep it aside.Heat oil in a pan add mustard,jeera when they begin to splutter ,add channa dal and urad dal fry until light brown.Next add ,hing,curry leaves, green chillies and fry.Add fried rava ,salt and mix well next add steamed peas ,2 cups of  boiling water. Cook till the water is gone.Add lemon juice.Simmer and close the lid for 2-3 min.Garnish with coriander and coconut and serve hot.

You can also add Dhania-Jeera Powder/Kalamiri Powder for additional spicy flavor.

Aloo Masala Palya / Aloo Masala Sabzi is made from simple potatoes blended in Bhath masala powder - a South Indian variety.

Ingredients

  • 3 big Potatoes, boiled
  • 1/2 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • Hing-pinch
  • Turmeric-pinch
  • 2-3 tsp Bhath pwd
  • Few Corianderleaves
  • Few Curry leaves
  • 2 tbsp Oil
  • Salt to taste
  • Roasted cashews(opt)

Method: Mash the boiled potatoes. Heat Oil in pan, add mustard, chanadal, uraddal, jeera ,hing ,tumeric, curry leaves, and fry for some time. Add the masala pwd in the oil, next add the boiled potatoes and mix. Add salt and mix well, fry for some time till the bhath pwd coats on the potatoes. Garnish with coriander leaves. Add coconut if req. Serve hot with chapati or rasam rice.

Mix Vegetable Rice is an easy one pot meal .

Healthy and nutritious blend of variety of vegetables with rice.


Ingredients:
Mix Vegetable Rice
Vegetable Rice
1 cup rice
1 cup chopped mixed vegetables,
(beans,Potatoes, carrots, capsicum , peas)
1/2 tsp. mustard
1/2 tsp.chana dal
1/2 tsp. urad dal
Hing-Pinch
Curry leaves-few
Turmeric-pinch
1 tbsp. lemon juice
2 tbsp. oil
Salt to taste
2 tbsp. Bhath Powder
grated dry coconut-2 tbsp
Roasted cashews-few

Method:
Cook rice and Spread it on a plate.

Tomato Palya / Tomato Sabzi is easy to prepare.Use it as accompaniment for chapatis or puris/parathas.A nice blend of spice and tanginess.

Ingredients

  • Peas - 1 cup (steamed)
  • Onion - 1 finely chopped
  • Tomatoes -1-2
  • Onion -1 
  • Ginger garlic paste-1/2 tsp
  • Green Chilies - 1-2
  • Cashewnut - few (roasted)
  • Curd - 1 tbsp
  • Chana masala- 2tsp(MTR)
  • Red chilli pwd- 1/2 tsp
  • Dhania jeera pwd-1/2 tsp
  • Kasoori methi -few (crushed)(Everest)
  • Coriander leaves-few
  • Salt - to taste
  • Jeera-1/2 tsp
  • Butter - 1 tbsp
  • Oil - 2 tsp


Method-  

Grind tomatoes, chilies. Also grind cashews with curds. Keep it aside. Heat butter in pan, add jeera, onion, saute well, add ginger garlic paste, and saute, add the ground tomato mix add the masala pwds and fry well.

Next add the cashew paste and fry. Add the steamed peas, add water if required, mix well add salt, and mix and let it simmer for 2-3 mins till the gravy blends in.

Add crushed kasuri methi, coriander leaves, mix and serve Peas Masala Gravy hot with Indian breads.

Hurlikayi Matodi Palya / Green Beans Palya with lentils


Hurlikayi Matodi Palya /Matwadi palya (Green beans with lentils) is a South Indian speciality. A side dish for chapati made  with a ground mix of lentils (chana dal) coconut and spices.

It is tasty and spicy.



Ingredients-
french beans stir fry,Green Beans Palya with Lentils,Hurlikayi Matodi Palya

Green Beans / Hurlikayi-1 cup finely chopped
Channa Daal- 1/2 cup  (soaked)
Fresh grated Coconut- 2 Tbsp
Red Chilies- 6-8
Jeera/Cumin- 1 Tsp
Mustard- 1/2 Tsp
Chana dal-1/2 tsp
Urad Dal-1/2 tsp
Curry leaves- few
Turmeric Powder- pinch
Hing-pinch
Salt- to taste
Oil- 3 Tbsp
Method-In a kadai,heat oil,add mustard,jeera,once done ,add chana dal,urad dal,hing,curry leaves,turmeric ,saute once done, add the green beans and fry well.Meanwhile grind the Channa Daal, coconut, chilies, jeera, hing in a blender to make a course paste.Once the beans are done,add the ground paste and mix well,simmer on low heat ,keep stirring in between till the sabzi/palya is dry and blended well.
Serve this matodi palya / paruppu usli hot with chapati or rasam rice.

Avalakki Payasa/ Poha Kheer is simple and easy dessert recipe.Delicious and tasty made during festivals as well.Enjoy this flattened rice pudding warm or cold.


Ingredients

  • Poha/Avalakki-Thick-1 cup
  • Milk, 3 cups
  • Sugar-1 cup
  • Elachi pwd-2 tsp
  • Badam pwd-2-3 tsp
  • Ghee, 2 tbsp
  • Cashews/ Raisins-few


Method-In a kadai,add ghee and fry cashew and raisins.Also fry the avalakki slightly.Meanwhile boil milk on low flame ,add the avalakki and let it cook well.Add sugar and let it cook for 5-10 mins,keep mixing in between.Add the dryfruits,elachi pwd,badam pwd and mix well.Enjoy it warm or chilled.

  • 1 cup sweet corn(steamed)
  • 1 onion chopped
  • 1 tomato chopped
  • 1-2 tsp green chutney
  • 1/2 tsp chaat masala
  • 1/2 tsp red chilli pwd
  • 1/2 tsp tamrind chutney
  • 1 cup sev
  • few salted peanuts
  • Salt-for taste




Method

In a bowl, add the above ingredients-corn, tomato, onions, masala pwds chutneys and mix well.
Top it up with sev and salted peanuts and serve .






(you can garnish with lime juice and coriander leaves)

    Ingredients
  • Boondi – 3 cups (haldiram)
  • Onion –1 cup finely chopped
  • Tomatoes -1/2 cup finely chopped
  • Carrot-1/2 cup grated
  • Green chilies –3-4 chopped
  • Chaat masala – 1 tsp
  • Lemon juice – 1 tsp
  • Coriander leaves-few
  • Sev-2-3 tsp
  • Roasted peanuts-few
  • Salt – to taste 

  • Method-In a bowl,add boondi, onion, tomato, cilantro, green chilies, chaat masala.Mix well Garnish lemon juice ,coriander leaves,sev .Serve immediately.

Dahi Vada

Dahi Vada yummy vadas (made from lentils-urad dal) added to seasoned , spicy yogurt.Enjoy chilled.


Ingredients:

1 cup urad dal (for vadas)
(pre-soaked)
2-3 green chillis 
salt to taste
oil - frying

2 cups yogurt(curds)
1 tsp red chilli powder
1 tsp chaat masala 
1/2 tsp jeera pwd

pinch-sugar(opt)

Method- Grind the urad dal with chillies into fine paste.Add salt to the mix.Prepare the vadas and fry them in oil.Add these vadas into warm water and let it for 15-20 secs.Squeeze any excess water.Meanwhile prepare the dahi mix-add chilli,jeera pwd,salt,chaat masala,sugar and mix well.For serving,keep the vadas in a bowl,add the seasoned curds over the vadas.Garnish with coriander leaves and pinch of chaat masala.Serve chilled.

Method: Heat oil in a pan. Add the items in seasoning ,once done, add the chopped vegetables and fry for few mins. Add salt. Cover and cook on low flame. Once done, add grated coconut, lemon juice Mix well. Serve hot with rasam rice or chapati.
