Hurlikayi Carrot Palya / Green Beans Carrot Sabzi



Hurlikayi Carrot Palya (Green Beans with Carrot) , a wonderful combination of the two veggies making it a colourful and tasty side dish for chapati.Very easy to prepare.The dash of coconut makes it more delicious.Enjoy!


Ingredients:
1  cup  Green Beans(hurlikayi) &
Hurlikayi Carrot Palya / Green Beans Carrot Sabzi

1 cup Carrots
(chopped)
2-3 Tbsp shredded Coconut
4-5 green chillies chopped
1 Tbsp Lime juice
Salt to taste

Seasoning 
1/2 tsp mustard
1/2 tsp jeera
1/2 tsp chana dal
1/2 tsp urad dal
1 Tbsp Oil
Turmeric-pinch
Hing-pinch
Curry leaves

Method:Heat oil in a pan. Add the items in seasoning ,once done,add the chopped vegetables and fry for few mins Add salt. Cover and cook on low flame.Once done, add grated coconut ,lemon juice Mix well.Serve hot with rasam rice or chapati.

Tomato Onion palya / Tomato Onion sabzi

Tomato Onion palya / Tomato Onion sabzi is very simple and easy to prepare. Delicious, tangy and spicy to taste. Enjoy as side dish with chapati.


Ingredients

  • Tomatoes  2 chopped
  • Onion        1 chopped
  • Sugar     1/4 tsp (opt)
  • Sambhar Pwd-2-3 tbsp
  • Salt-for taste



Seasoning

  • Oil                  2 tbsp
  • Green Chillies  1-2 chopped
  • Mustard                1/4  tsp 
  • Jeera        1/4 tsp
  • Channa Dal   1tsp
  • Urad dal  1tsp
  • Curry leaves   few
  • Hing-pinch


Method:

In a kadai, heat oil, prepare the seasoning ,add mustard, hing, jeera, once they splutter add chana dal, urad dal, curry leaves, green chillies, saute for 1-2 mins.
Next add onion and fry well, add tomatoes and stir till the tomatoes become soft.
Add salt, masala pwd, sugar and mix well. 
Serve Tomato Onion palya hot with chapatis.

Heerekayi Palya

Heerekayi Palya (Ridge Gourd / Turai sabzi ) is simple and easy to prepare. Enjoy with Chapati or rice. This is the tasty South Indian version with coconut and no onion.

  • Heerekayi/ Ridge Gourd  -1 cup
  • (peeled and chopped)
  • Oil-2 tbsp
  • Bhath pwd-2 tbsp
  • Mustard    1/4 tsp
  • Jeera- 1/2 tsp 
  • Turmeric -pinch
  • Hing pinch
  • Chana dal-1/2 tsp
  • Urad dal-1/2 tsp
  • Curry leaves-few
  • Salt to taste
  • Grated coconut-2 tbsp

Method:In a pan,h
eat oil ,add mustard seeds,chana dal,urad dal,hing,curry leaves,turmeric. Next add the chopped Ridge gourd ,and fry well till done. Next add salt,masala pwd and mix well. Add the grated coconut
mix and serve hot with chapati or rice.

Hurlikayi Bhath / Green Beans Masala Rice is spicy rice variety .An easy one pot meal made with green beans blended with homemade bhath masala powder.

Ingredients: 
Hurlikayi Bhath / Green Beans Masala Rice
Hurlikayi Bhath / Green Beans Masala Rice
1 cup Cooked Rice 
1 cup chopped green beans(hurlikayi)

salt as per taste
Grated coconut-2 tsp

Seasoning

2 tbsp Oil
1 tsp Mustard(sasive)
1/2 tsp chana dal
1/2 tsp urad dal
2-3 tbsp Bhath Masala pwd
5-6 Curry leaves
Roasted cashews-Few
Turmeric pwd-pinch
Hing-pinch


Method: Allow the rice to cool,spread it on a plate.Heat oil in a kadai. Add mustard seeds,turmeric, curry leaves ,hing,chana dal,urad dal.Once done add chopped green beans to the above seasoning. Saute frequently till.Next add salt, cashews, masala powder. Mix well.Add the cooked rice .Mix well.Cover and cook on low heat.Granish with grated coconut.Serve hot.




(You can chop the beans finely also,I liked it this way,you can add MTR Vangi Bhath pwd also)

Aloo Bonda / Batata Vada


Aloo Bonda / Batata Vada (potato fritters) is one favorite snack recipe loved by all.A best bet on a rainy day or a nice evening snack with a hot cup of tea.


Ingredients

Aloo Bonda / Batata Vada

1cup gram flour (besan)
2 tbsp Rice flour
Salt to taste
1/4 tsp Garam Masala 
1/4 tsp dhania jeera pwd
1 tsp hot oil
Water


2 Potatoes (boiled and mashed)
4-5 Green Chilies (chopped)
Coriander leaves -few
Curry leaves-few
Mustard-1/2 tsp
Jeera -1/2 tsp
Chana dal-1/2 tsp
Urad dal-1/2 tsp
Hing-pinch
Turmeric pwd-pinch
lemon juice-1 tsp
Oil for frying




  • Method -In a kadai,make the seasoning with mustard,jeera ,chana dal,urad dal,curry leaves,hing,green chillies. Once done add the mashed potatoes, salt and mix well .Make small balls of this mixture. Next in a bowl, add gram flour, rice flour, turmeric powder, little salt, masala pwds,hot oil. Add little water and  make a batter for the vadas. Dip each ball in the batter and deep fry till golden brown. Serve hot with chutney or ketchup.

Spinach Dal / Dal Palak

Spinach dal or Dal Palak is a healthy combination of Moong Dal with Spinach or palak tempered with hing ,jeera and chilies.Nutritious and tasty.Enjoy with rice or chapati.

Ingredients

  • 1 cup moong dal 
  • 1 cup chopped spinach
  • 1/2 tsp turmeric
  • Salt-taste
  • Water
  • Lemon Juice-1/2 tsp
  • Coconut-1-2 tsp(opt)
Seasoning:
  • 1 tsp oil/ghee
  • 1 tsp mustard seeds 
  • 1/2 tsp jeera
  • 1/2 tsp channa dal
  • 1/2 tsp urad dal
  • hing -pinch
  • curry leaves-few
  • Green chillies 3-4 chopped
  • Method : Pressure cook dal with turmeric and oil.Blend the dal .Cook spinach in water till done.Add spinach ,dal add water if req.Add salt and mix well.Cook on low heat for 5-10 mins.Heat oil in a pan,add the seasoning items ,once done add to the dal.Add lemon juice.Serve hot with white rice or chapati.

    Corn Cheese Toast

    Corn Cheese Toast is delicious. Enjoy this open sandwich as snack. Healthy and tasty. Kids will love it.


    Ingredients

    Corn Cheese Toast
    Corn Cheese Toast
    Bread - 6 slices 

    Sweet corn - 3/4 cup (steamed)
    Capsicum - 1 finely chopped
    Tomato-1 finely chopped
    Onion-1 finely chopped
    Green chillies-3-4 finely chopped
    Mozerella Cheese  - 2 tbsp
    Pepper pwd - for taste
    Salt - as required
    Oil-for toast
    Tomato sauce


    Method- 


    Mix the sweet corn,onions, tomatoes, capscicum, add chillies, cheese, salt and pepper and mix well. 

    Keep it aside. 
    Toast the bread slice crisp with oil/butter.  
    Spread the filling on the bread. 
    Microwave for 10-20 sec or till the cheese melts. 
    Alternatively you can toast on tava.
    Serve with tomato sauce.
    Enjoy hot.

    Besibele Bhath

    Bisibele Bhath is the famous traditional South Indian Rice Recipe. Enjoyed by all. A healthy mix (Melange) of vegetables, rice and lentils all blended with spices making it a perfect meal.


    Ingredients
    BisiBele Bhath
    BesiBele Bhath

    Rice - 1 cup
    Tur dal - 3/4 cup (togari bele)
    Vegetables- carrot,beans,potato
    (finely chopped) 1 cup
    green peas- 1/2 cup
    Chopped onion - 1 
    Chopped capsicum-1
    Coconut 3-4 tsp
    Bisibele Bath powder -4-5 tbsp
    Tamarind Juice - 3-4 tsp
    Jaggery - 1 tsp
    salt for taste

    For Seasoning
    Ghee -1 tsp
    Cashews-few
    Red chilly1-2
     curry leaves-few
    mustard-1 tsp
    Hing-pinch

    Method: Cook the rice and dal separately in a pressure cooker.
    Wash and cook the vegetables with pinch of salt. Grind the masala pwd with coconut into smooth paste.
    In a kadai, add the cooked dal,add the tamarind juice , masala paste and boil for 2-3 min.
    Add the vegetables ,rice and mix well.
    Add little jaggery, salt and water and mix everything well,till it blends well. Meanwhile prepare the seasoning. Also fry the onion and capsicum in little oil. 
    Add all this to the Bisibele bhath and mix well.
    Serve BisiBele Bhath hot topped with ghee and chips/ Khara Boondi and raita.

    Ingredients:

    • 2 Simla Mirch (capsicum)
    • cut into big squares
    • 1 onion, finely chopped
    • 1/2 cup peas
    • 1/4 tsp ginger garlic paste
    • 2 tomatoes,cut into big pieces
    • 1-2 green chillies chopped
    • 1/2 tsp jeera
    • 1/2 tsp red chilli pwd
    • 1/4 tsp turmeric pwd
    • 1/2 tsp dhania jeera pwd
    • 1/2 tsp roasted peanut pwd
    • 1/2 tsp kasuri methi(Everest)
    • salt to taste
    • 1 tbsp oil
    • Curry leaves-few
    • Coriander leaves-few

    Method- In a kadai,add little oil, fry capsicum and keep it aside. Next in a pan,heat oil, add jeera, chopped onions, green chillies and curry leaves and fry, next,add ginger-garlic paste and saute for 2-3 mins. Add the chopped tomatoes and masala pwds and fry well. Add little water and cook for 1-2 mins. Next add the fried capsicum, salt, peanut pwd, kasuri methi and mix. Simmer for 2-3 mins till the gravy blends well. Garnish with coriander leaves .Serve hot with rice or rotis.

    Aloo Palak Gravy


    Aloo Palak Gravy (Potatoes with spinach blended with spices) a healthy ,nutritious side dish for chapati or Rotis. Enjoy your meal with the "greens".


    Ingredients
    2 cups boiled spinach
    1 cup chopped potatoes
    1/2 onion chopped
    1/2 tomatoes
    Aloo Palak, Aloo Spinach gravy

                    Aloo Palak Gravy

    1 tsp jeera
    1 tsp ginger garlic paste
    1 tsp garam masala
    2-3 green chillies
    1/2 tsp dhania jeera powder
    1/2 tsp red chilli pwd
    1/2 tsp turmeric powder (haldi)
    3 tbsp oil
    Salt
    Roasted cashews-few

    Method-

    Heat the oil in a pan, fry the potatoes and keep aside.
    Grind the spinach,chillies into fine paste.
    In a kadai, heat oil, add the cumin seeds, add ginger garlice paste, onion and saute.
    Add tomatoes and fry for 1-2 mins.Add the masala pwds and mix well.

    Next add the ground spinach paste, fried potatoes, salt and mix well till the gravy blends well,
    cover and cook on low flame for 2-3 mins.
    Garnish with kasuri methi. Serve Aloo Palak Gravy hot with chapatis or rotis.

    Onion Rava Dosa

    Onion Rava Dosa is simple and easy breakfast recipe.A favorite South Indian dosa variety.The dosa is thin and crispy and tasty too.Enjoy!


    Ingredients:
    Onion Rava Dosa , Semolina,rava

    • 1/2 cup Chiroti rava (fine rava)
    • 1/4 cup rice flour
    • 1/4 cup maida
    • 1-2 tsp jeera
    • salt to taste
    • Corainder leaves-few chopped

    • Onion-1 finely chopped
    Method-In a bowl,add all the flours,salt ,add water and mix well to make the dosa batter.Next add all the other ingredients-jeera,chillies,onion,coriander leaves.Mix well.Keep it aside for 1/2 hour.Heat the tava/skillet and make the dosas ,add oil to make it crisp and golden brown.Serve hot with chutney or enjoy it JLT!

    Avalakki Besibele Bhath

    Avalakki Besibele Bhath,seasoned rice flakes,Poha
    Avalakki Besibele Bhath

    • Avalakki Bisibele Bhath is a favorite weekend breakfast recipe. Easy to prepare,filling and healthy to eat. A mix of poha and lentils (moong dal) with vegetables and spices makes it tasty and delicious.
    This is a traditional authentic Madhwa recipe mostly done in Karnataka. It is also prepared on Ekadashi, vrats or fasting days.

    • Ingredients
    • 1 cup Avalakki/Poha (thick version )
    • 1/2 cup moong dal/hesaru bele
    • 2 cups chopped vegetables(beans, carrot, peas)
    • 1 capscisum (fried)
    • 3-4 tbsp bisi bele bath masala pwd
    • 4-5 tsp tamarind juice
    • 1-2 tsp jaggery
    • salt to taste
    •  2-3 tsp oil
    • 1/2 tsp turmeric pwd
    • Seasoning
    • 1 tsp mustard 
    • 1 tsp chana dal
    • 1 tsp urad dal
    • 1-2 red chilies
    • Few curry leaves
    • Pinch - Hing
    • 1 tsp ghee
    • 2 tsp peanut (roasted)
    • 2 tsp cashews(roasted)
    • 1 tsp Grated dry coconut (opt)

    • Method: Wash poha ,drain. Keep it aside. Meanwhile cook moongdal with turmeric and vegetables in pressure pan. Next in a pan, mix cooked moong dal, vegetables, add bhath pwd, add tamarind juice, salt and jaggery to it and mix well. Let it simmer for 5-10 mins till all the items blend well. Add soaked avalakki and mix well. 
    • Cook for 3 mins or more. Next ,heat oil in pan add all the items mentioned in the seasoning, once done add it to the avalakki.
    • Add roasted cashews and peanuts, coconut. Mix well. Add a spoon of ghee and serve Avalakki Besibele Bhath hot.

    Aloo Masala Gravy

    Aloo Masala Gravy or Dum Aloo is spicy sidedish of potatoes blended with yogurt and spices, a great combination for Indian Breads. A delicious creamy gravy for a perfect dinner or lunch.


    Ingredients

    • Baby Potatoes -7-8(boiled)
    • Red chilli pwd-1 tsp
    • Garam Masala -1tsp
    • Dhania jeera pwd-1tsp
    • Ginger garlic paste-1/2 tsp
    • Yoghurt/curds- 1 cup
    • Kasuri Methi-1/2 tsp(everest)
    • Jeera-1 tsp
    • Coriander leaves (finely chopped) 
    • Oil
    • Salt as per taste  

    For grinding

    • Onion (chopped) 1
    • Cashew nuts 8-10
    • Green chillies 2-3
    • Cinnamon pwd-pinch
    • Cardomom-1
    • Cloves-1

    Method - Grind the items with little water into fine paste. In a kadai, heat oil and fry the baby potatoes till golden brown. Heat oil in a pan, add jeera, ginger garlic paste, ground paste and fry for 5 mins.  Next add the masala pwds and fry for 1-2 mins, add the fried potatoes salt and mix it well. Next add the curds and simmer on low heat for 10 mins till the entire gravy blends well. Garnish with corainder leaves. Serve hot with Indian Breads.

    Gorikayi Matodi Palya /Matwadi palya (clusterbeans) is a South Indian speciality .A sabzi of simple gavar/guar with a mix of lentils (chana dal) coconut and spices.It is tasty and spicy.


    Ingredients:

    Gorikayi/cluster beans-1 cup
     finely chopped
    (cleaned and washed)

    Channa dal - 1 cup
    Grated coconut - 1/4 cup
    Green Chillies -5-6
    Ginger grated- 1 tsp
    Jeera-1 tsp
    Salt to taste
    Coriander leaves few (opt)

    For seasoning:
    Oil- 2-3 tbsp
    Mustard seeds-1/2 tsp
    Urad dal -1/2 tsp
    Chana dal-1/2 tsp
    Hing-a pinch
    Turmeric -1/4 tsp
    Red Chillies-1-2
    Curry leaves-3-4

    Method: Soak the channadal for 2 -3 hours along with jeera.Drain the water.Grind it along with coconut,ginger,chillies .Add  very less water for grinding.The mix should be coarse.Meanwhile heat oil in a pan and add all the items in the seasonings,add the gorikayi/cluster beans and mix.Cover it with a lid.Once the vegetable is done add the ground paste,salt and mix well.Let it cook on low heat for 10-15 mins.Keep stirring in between.Garnish with coriander leaves.Serve this matodi palya / paruppu usli hot with plain white rice or chapati.

    Adai Dosa

    Adai Dosa is another healthy nutritious dosa - a very filling breakfast a good start for a busy day. It is a blend of different types of lentils and rice.


    Ingredients

    Moong dal+Tur dal+Urad dal-1/2 cup

    Rice -1 1/2 cups

    Pepper-1/2 tsp

    Jeera-1 tsp

    Salt-as per taste

    curry leave/coriander -for garnishing

    Coconut-optional (adds taste)

     Method- Soak rice/dals separately for 5-6 hrs. Next grind with pepper ,jeera, salt, red chillies,hing and mix well. Leave overnight. Garnish with curry leaves/coriander leaves,coconut, season with mustard seeds and onion (optional ) and then make dosa. Serve hot with butter and  chutney / chutney pudi of your choice.

    Ingredients:
    • cauliflower, medium – 1 (cut and cleaned well)
    • Potatoes –3- 4 (boiled and cut into pieces)
    • Cumin seeds – 1 tsp
    • Ginger-garlic paste – 1/2 tbsp
    • Onion-1 finely chopped
    • Tomato,chopped – 2
    • Red chilly pwd – 1 tbsp
    • Turmeric pwd – 1/2 tsp
    • Garam masala – 1 tsp
    • Green chillies-1-2
    • Dhania Jeera pwd – 1 tsp
    • Oil – 2 tsp
    • Salt as per taste
    • Amchoor pwd-1/2 tsp(everest)
    Method: Heat oil in a kadai.
    Add cumin seeds,green chillies, ginger garlic paste and saute for a while.
    Next add onion,turmeric pwd,masala pwd ,add cauliflower and fry well. 
    Add the tomatoes and let it cook for 5-7 mins. 
    Add the potatoes ,salt and mix well, simmer till the vegetables get coated in the masalas properly. 
    Garnish with little lemon juice.

    Serve hot with Indian breads.
